I was just reading all of these great recipes and realized I need to cook more for DH
I used to love to cook, but I don't get home from work until 6:00, sometimes later and I hate eating at 8:00 so we usually eat something quick or eat out. But after reading all these great recipes and how much some of you girls cook I feel like I am depriving DH. LOL. I guess I could always cook some things ahead of time. I would love to have a great meal for Dh everynight but I run out of ideas. But you guys seem to have a bunch more....thanks!

yeah... i try to cook every week night, and then we eat out on friday and saturday nights. theres lots of stuff you can make thats easy and fast. you just have to plan ahead., we also try to make things that we can eat leftovers of. liek we'll make a biiiggg pasta dish on monday night, and have the leftovers on wednesday night. OR, i'll use my crockpot to make a big chili or stew and we have leftovers of that, too. i also freeze stuff. like i'll make a batch of stuffed shells on the weekend (makes like 40 of them), freeze them and then one night a few weeks later when i don't feel like cooking, i just pull out a few of the shells, throw some sauce on them and put them in the oven for 20 minutes. i've learned to get over that dinner has to be this big fancy production every night. its so easy to throw some chicken on the george foreman grill, and boil up some brocolli for a nice, healthy easy meal

Some good tips...
I do a lot of our meat shopping at BJs ... so then I break the big packs into smaller freezer bags, and get things ready when I break them up.
FOr example I'll make a 1.5 lb freezer bag of chicken breasts, and I'll put in the bag Jack Daniels BBQ Sauce and this way when the meat defrosts it is marinating at the same time. I'll then grill them up and it's super easy and DH loves them.
I'll mix up my hamburger recipe quick before I put the meat away, whch is about 1.5 lbs 95% lean ground beef, some salt, ground pepper and a few splashes of worsteshire sauce. I then make patties and freeze them in individual small baggies --- and this way I just have to take out 2-4 baggies when I want to cook them one night, instead of having to defrost the entire pack of meat and mix them up, and I can just throw them on the grill frozen.
Also every few weeks I make a HUGE pot of my chicken-ball soup. I can give you the recipe if you want it. It's chicken soup with rice and little chicken meatballs -- made with canned stock so it's easier to make then chicken soup from scratch. We'll have it 2 nights during the week for dinner when I make it, plus there are other leftovers from it.
Crock pots are another awesome thing---beef stew, also cheddar brocolli soup are two of the things I make in there.
You can make a huge pot of sauce on the weekend and then make different things with it...
My FIL also likes to make a big batch of chicken cutlets on the weekend and then use them for different things during the week!
HTH! Melissa
