Rainbow cookies
Aren't Rainbow Cookies made with Almond Paste? Anyone allergic to nuts will be allergic to Almond paste.

I use almond extract but I suppose it depends what kind of nut allergy someone has.
ETA: Sorry I must have read too fast and missed the nut allergy.

Re: If you were only making 1 kind of cookie
I just made Snickerdoodles last night. I'm still new with baking but it was very easy and they came out great. I'm pretty sure there are no ingredients with peanuts.

Re: If you were only making 1 kind of cookie
I have a good recipe for triple chocolate cookies (they use cocoa powder, chocolate chips and are dipped in ganache) if you want that...

Re: If you were only making 1 kind of cookie
Thanks everyone! Great suggestions!!
I am allergic to most nuts (peanuts and tree nuts). Stinks because I LOVE almond. Didn't become allergic until i became an adult. I do use artificial almond extract sometimes just to get the almond fix! So many awesome sounding recipes contain nuts, so frustrating! Now I am thinking maybe something with coconut! YUM!
