I'm trying a new crockpot potato soup recipe
and am wondering what to serve with it. Potato soup is typically pretty filling so I'm thinking just a salad. What do you think? I hope it's good. I'm in full on soup and crockpot mode lol. I'll post recipe if it's a keeper!

I made potato, roasted pepper & aspargus soup in my crock pot last week. DH loved it. DH & I were filled on the soup alone - its hearty.

OK, so it was OK, but I'm not loving it. I sort of combined the 2 bottom recipes, but I mostly followed the 2nd one. it was to chicken stock-y if that makes sense lol. I like the idea of the cream cheese & cream of chicken soup as the thickener but didn't love the end result. Here they are:
Potato Soup Ingredients: 6 potatoes, peeled and diced ·1 cup chopped onion ·2 carrots, thinly sliced ·2 ribs celery, thinly sliced ·4 cups chicken broth ·1/2 teaspoon dried basil ·1 teaspoon dried parsley flakes ·1 teaspoon salt, or to taste ·1/2 teaspoon pepper ·1/4 cup all-purpose flour ·1 1/4 cups cream or half-and-half ·real bacon bits, optional Preparation: Combine first potatoes, chopped onion, carrots, celery, chicken broth, basil, parsley, salt, and pepper in a slow cooker. Cover and cook on HIGH for 3 hours, or until vegetables are tender. Stir together flour and cream or half-and-half; stir into soup. Cover and cook 30 minutes longer or until hot. If desired, sprinkle bacon bits over each serving. -------------------------------------------------------- CROCKPOT POTATO SOUP ·5lbs. potatoes; peeled and coursely chopped ·1 sm. onion; chopped ·8oz. cream cheese; softened ·3-14.5oz. cans reduced sodium chicken broth ·1can cream of chicken soup ·1/4t. pepper ·GARNISHES: crisp bacon; crumbled ·shredded cheddar cheese ·sour cream ·sliced scallions
Directions Put potatoes & onion in crock-pot. 1.Combine the cream cheese, chicken broth, cream of chicken soup & the pepper. Add this mix to teh crock-pot. 2.Cover & cook on LOW for 8-10 hours or on HIGH for 4-5 hours. 3.After cooking time, mash the potatoes if you want the soup to be thicker. 4.Ladle into bowls and garnish with a dollop of sour cream and the cheese & bacon. Sprinkle with sliced scallions.
