Maybe like a steakhouse kind of meal?
-Filet mignon or beef tenderloin -creamed spinach -caramelized onions -potatoes (roasted or mashed) etc.
or -spiral ham -sweet potato casserole -roasted asparagus

Re: In-laws coming for dinner...what to make?
sliced sirlon steak, cesar salad, rice and garlic bread
i love a think sirloin steak - 1.5" thick. I season it with cumin, chili powder, garlic salt and ground red pepper. google "chili seasoned steak shoestring fries" and you will get the exact spice rub which is perfect if u ask me> The i broil it for 5-6 mins per side.
Do cesar salad- there is a great cesar dressing- i forget the name- ceasarini or something..its fab - slice romaine lettuce, put dressing on, a squeeze of lemon and top with crutons and parm cheese thickly sliced
buy a garlic bread from the supermarket- the premade ones are good
mashed potatoes or whole grain rice you can do, as well

Re: In-laws coming for dinner...what to make?
i made chicken and steak fajitas with fresh guac and sour cream plus spanish rice and a mexican salad. you can even do shrimp fajitas as well with warm flour torts -- what a crowd pleaser, easy to do, and everyone eats it.

A pot roast is a great idea but you can make it early and not have to watch it.
Fresh ham - veggies/salad/scalloped potatoes
Roast pork, veggies/mashed potatoes

If they like mexican or spanish food you can do arroz con pollo or chicken and beef fajitas or chopped meat made mexican style with all the toppings like cheese, guacamole, salsa, lettuce, tomato. Beans and rice could be your sides.
