Re: In need of a really good pb cookie recipe
this is the best I have ever tried and make it every year.
Honest to God, the Best Peanut Butter Cookies I Swear! Ingredients: 2 cups creamy peanut butter 2 cups sugar 2 large eggs 2 teaspoons baking soda A pinch of salt 1 teaspoon vanilla Preparation Preheat oven to 350 degrees. Grease 2 cookies sheets or cover with parchment paper. Beat peanut butter and sugar in medium bowl with electric mixer until fluffy. Beat in eggs and then baking soda, salt and vanilla. Roll dough into 1-inch balls and place 2 inches apart on cookie sheets. With tines of a fork, press crosshatches into the balls to flatten them. Bake cookies, one sheet at a time, in middle of oven, for 10 minutes, or until they are puffy and golden brown, or about 12 minutes for crisp cookies. Let sit on cookie sheets for a couple of minutes; then transfer to wire rack to cool. Make about 3 dozen
(I sometimes drizzle some melted chocolate on top)

Re: In need of a really good pb cookie recipe
have you made peanut butter blossoms? they're super easy... and they don't spread much at all so you can really load up your cookie sheets!
* 48 HERSHEY'S KISSES Brand Milk Chocolates * 1/2 cup shortening * 3/4 cup REESE'S Creamy Peanut Butter * 1/3 cup granulated sugar * 1/3 cup packed light brown sugar * 1 egg * 2 tablespoons milk * 1 teaspoon vanilla extract * 1-1/2 cups all-purpose flour * 1 teaspoon baking soda * 1/2 teaspoon salt * Granulated sugar
Directions: 1. Heat oven to 375°F. Remove wrappers from chocolates.
2. Beat shortening and peanut butter in large bowl until well blended. Add 1/3 cup granulated sugar and brown sugar; beat until fluffy. Add egg, milk and vanilla; beat well. Stir together flour, baking soda and salt; gradually beat into peanut butter mixture.
3. Shape dough into 1-inch balls. Roll in granulated sugar; place on ungreased cookie sheet.
4. Bake 8 to 10 minutes or until lightly browned. Immediately press a chocolate into center of each cookie; cookie will crack around edges. Remove from cookie sheet to wire rack. Cool completely. About 4 dozen cookies.

Re: In need of a really good pb cookie recipe
or i love these...
* 1 3/4 cups all-purpose flour * 1/2 teaspoon salt * 1 teaspoon baking soda * 1/2 cup butter, softened * 1/2 cup white sugar * 1/2 cup peanut butter * 1/2 cup packed brown sugar * 1 egg, beaten * 1 teaspoon vanilla extract * 2 tablespoons milk * 40 miniature chocolate covered peanut butter cups, unwrapped
Directions
1. Preheat oven to 375 degrees F (190 degrees C). 2. Sift together the flour, salt and baking soda; set aside. 3. Cream together the butter, sugar, peanut butter and brown sugar until fluffy. Beat in the egg, vanilla and milk. Add the flour mixture; mix well. 4. Shape into 40 balls and place each into an ungreased mini muffin pan. 5. Bake at 375 degrees for about 8 minutes. Remove from oven and immediately press a mini peanut butter cup into each ball. Cool and carefully remove from pan.
I didn't make mine in muffin cups... and so they end up looking like this:
