Re: In the mood to bake something chocolate today!
I have this recipe saved. Never made it but def on the list of things to make next time I have friends over (that are not on WW )
Molten Chocolate Cakes Estimated Times: Preparation - 20 min | Cooking - 12 min | Yields - 6 servings
Enjoy these delicious molten cakes with a deep, rich chocolate center.
Ingredients:
2 tablespoons plus 3/4 cup (1 1/2 sticks) butter, divided 8 oz. NESTLÉ® TOLL HOUSE® CHOCOLATIER 62% Cacao Bittersweet Chocolate Baking Bar, broken into pieces 3 large eggs 3 large egg yolks 1/4 cup plus 1 tablespoon granulated sugar 1 teaspoon vanilla extract 1 tablespoon all-purpose flour Powdered sugar
Directions: PREHEAT oven to 425° F. Generously butter six 6-ounce ramekins or custard cups with two tablespoons butter.
STIR 3/4 cup butter and chocolate in medium, heavy-duty saucepan over low heat until chocolate is melted and mixture is smooth. Remove from heat. Beat eggs, egg yolks, sugar and vanilla extract in large mixer bowl until thick and pale yellow, about 8 minutes. Fold 1/3 of chocolate mixture into egg mixture. Fold in remaining chocolate mixture and flour until well blended. Divide batter evenly among prepared ramekins. Place on baking sheet.
BAKE for 12 to 13 minutes or until sides are set and 1-inch centers move slightly when shaken. Remove from oven to wire rack.
TO SERVE, run a thin knife around top edge of cakes to loosen slightly; carefully invert onto serving plates. Lift ramekins off of cakes. Sprinkle with powdered sugar. Serve immediately.

Re: In the mood to bake something chocolate today!
just made peanut butter cupcakes with choc peanut butter frosting last night... I know - they're not choc cupcakes but they're very good...
1/3 cup butter, softened 1/3 cup creamy peanut butter 1/2 cup granulated sugar 1/4 cup packed brown sugar 2 eggs 1 teaspoon vanilla 1-3/4 cups all-purpose flour 1-1/2 teaspoons baking powder 1/4 teaspoon salt 1-1/4 cups milk
1. Preheat oven to 350°F. Line 18 standard (2-1/2-inch) muffin pan cups with foil baking cups.
2. Beat butter and peanut butter in large bowl with electric mixer at medium speed until smooth; beat in sugars until well mixed. Beat in eggs and vanilla.
3. Combine flour, baking powder and salt in medium bowl. Add flour mixture to peanut butter mixture alternately with milk, beginning and ending with flour mixture.
4. Spoon batter into prepared muffin cups, filling 2/3 full. Bake 23 to 25 minutes or until cupcakes spring back when touched and toothpicks inserted in centers come out clean. Cool in pans on wire racks 10 minutes. Remove cupcakes to racks; cool completely.
I only baked 20 mins and they were still a little overdone... watch them.
5. Prepare Peanut Butter Chocolate Frosting. Frost each cupcake with about 1-1/2 tablespoons frosting. Garnish as desired.
Peanut Butter Chocolate Frosting:
I can't find online:
3 Tbsp creamy PB
4 Tbsp milk
4 cups confectioners sugar
cocoa powder (forget - maybe 1 cup - you could wing it)
or you could just use store bought choc icing and beat some PB in there...
