Independence Week Menus!
What do you got going on this week??
Saturday: BBQ at boss' home! Sunday: Another BBQ at friends! Monday: BBQ at MIL's! Tuesday: Grilled Lemon garlic Shrimp, House Salad, Grilled Focaccia. Wednesday: Chicken w/tomatoes, zucchini & mushrooms, Wild rice pilaf, 3 bean salad. Thursday: Turkey Tacos Friday: Pasta with summer sauce, chicken sausage, house salad.

SAT - herb-roasted whole chicken, pioneer woman's crash hot potatoes
SUN - going to BIL & SILs for a BBQ, bringing dessert: oreo truffles, chocolate covered pretzel rods, supplies for smores
MON - baked southwestern chicken egg rolls (leftover chicken from sun), homemade salsa, cilantro-lime rice
TUES - pioneer woman's springy shells
WED - cheeseburger sliders, baked onion rings, salad
THURS - chicken francese, salad
FRI - chef's night off

Sat: BBQ Burgers, dogs, macaroni salad, potato salad, & cole slaw
Sun: BBQ Ribs, corn on the cob and leftover salads
Mon: Pizza
Tues: fast food (DH's idea, I swear)
Wed: Pasta tossed with Rojenoro's Summer Sauce and eggplant cutlets
Thurs: BBQ Steak, PW crash hot potatoes, Salad wedge
Fri: Chicken cutlets, Rice Pilaf, corn on the cob, and tomato, cucumber & fresh mozzerella salad
I'll fill in the rest after I do food shopping tomorrow.....this thread always make me become organized

SAT - At the boat. London Broil, and got some sides at Boston Market.
SUN - BBQ at my cousins
MON - Chicken Cordon Blue Burgers (never made this last week) Oven Fries, Cucumber & Tomato salad
TUES - BBQ Chicken, Corn on cob, Salad
WED - Orecchiette w/ Pancetta & Peas, Caprese Salad
THUR - PW Marlboro Man's Favorite Sandwich (steak) onion rings, grilled veggies
FRI - Stripped Bass, Couscous, sauteed spinach

Summer sauce is just what I call it.. I don't know if there is a right name for it!
I saute some garlic in olive oil and then take the garlic out and add some dry white wine (Chardonnay or Sauvignon Blanc is good here). I don't know how much I add.. I'd say probably a good 3/4 of a cup. When the wine starts to cook down I put the garlic back in, squeeze in some lemon juice - probably about 3-4 lemons. And added some freshly chopped tomato.. maybe 2 cups or so? Cook until heated through and fragrant.. maybe 8 minutes or so? Add salt to taste, throw in some fresh basil and toss it with the pasta. Then add some good Reggiano. It's light and easy to make.

Mon: Not sure yet, kids are worn out from traveling to south jersey all weekend, might just order pizza - they are still napping!
Tues: chicken salad wraps with goat cheese salad
Wed: BBQ chicken breasts, smashed sweet potato slices and grilled zucchini
Thurs: Ravioli with fresh tomato sauce
Fri: chicken and cranberries over rice

TUE - no idea - I forgot how to cook
WED - I have a softball game, DH is on his own
THU - same as Wednesday
FRI - same as Tuesday
SAT - same as Tuesday and Friday

Sat: BBQ at a friend's house Sun: BBQ at a neighbor's house Mon: We BBQ'd- burgers(turkey & beef), hot dogs, pasta salad with corn & sugar snap peas, fried green peppers from the garden, green salad from the garden Tuesday: BBQing marinated Chicken legs, left over pasta salad (adding tomatoes) Wednesday: Mom's house for dinner Thursday: Cuban Restaurant Friday: Marinated Turkey breasts (BBQ or Oven) and cucumber/tomato/fresh basil salad
Ok, so I'm not cooking a lot this week, but at least it's all planned ahead of time!

Mon-turkey burgers and fixings
Tuesday-tri color fusilli pasta salad with black olives, roasted red peppers, mozzerella, turkey pepperoni
Wed- broiled flounder, maybe left over pasta salad or veggie and brown rice
Thurs- think I am going out with girlfriends...
Fri- turkey sausage and peppers and onions
all simple things it is too hot to keep the oven on too long or stand in front of the stove too long

Monday: Lasagna "stew", arugula
Tuesday: Homemade Kung Pao shrimp tossed with glass noodles
Wed: Homemade Cuban black beans, brown rice, sauteed chicken breasts, tomato and avocado salad.
Thursday: Tilapia, sauteed zucchini, israeli couscous (these are the basics - I haven't really figured out the details of this one.).

A little late, but here's the rest of the week:
Thursday- Chicken Curry, Basmati Rice, and Mixed Veggies
Friday- Chicken Salad with Apple and Basil
Saturday- Asian-Marinated Grilled Fish (from Viking School), Rice, and Roasted Kohlrabi
