irish soda bread
anyone have a great recipe? raisins are a must!

This is the recipe I have, I never use the caraway seeds, just personal preference. I also use a loaf pan to bake it in. I also think an hour baking time may have been too long, check it around 40 minutes
-3 cups flour -2/3 cups sugar -1 tsp baking soda -2 tsps baking powder -1 tsp salt -1 1/2 cup rasins -1 or 2 tbsp caraway seeds -1 egg -1 1/2 cup buttermilk (or regular milk + 2tsps vinegar) -3 tbsp butter
Directions -Put all dry ingredients together (including caraway seeds). Then cut in butter
-Mix egg and buttermilk, then add to dry mix, then add raisins.
-Put in preheated 350 degree oven for about an hour

This is the one I make every year. I also like it more on the cakey side. I use the dough hook attachment on my mixer to make it.
Irish Soda Bread
3 1/2 c flour 2/3 c sugar 1 tsp salt 1 tsp baking soda 1 tsp baking powder 1 1/2 c raisins 1 1/3 c buttermilk 2 beaten eggs 4 tsp melted butter 1/2 tsp vanilla 1 tsp caraway seeds (optional)
Mix dry ingredients Mix liquid ingredients Mix together until well blended Grease and flour dish Bake at 350 for 50-60 minutes
I have a special dish just for the soda bread but it's very similar to a pie dish. Cover with foil towards the end if you feel it's browning too much.

The recipe on the friendship buttermilk container is really good. Make it in a bundt pan.

Don't knead it too much! Let the liquid moisten the flour and just shape it with floured hands. Yum, now I want some.
