all the restaurants I go to get their fish in everyday. there shouldn't be a day where it's not fresh.

Hubby has this theory that you should NEVER order the "fish special" on Sunday. The reason being that most restaurants get their new shipment of fish on Tuesday, so by Sunday the fish is kinda stinky. The special is usually the fish they're trying to get rid of by the end of the weekend and usually doused in some kind of sauce the covers it's "fishiness". Has nothing to do with Sushi, but this post made me think of it

Most places do not get fresh fish on Sunday. They use whatever is left over. The new fish delivery doesn't come in until Mon or Tues depending on if they are open Mon or not, etc.

Anthony Bourdain (executive chef at Les Halles Brasserie - host of No Reservations on The travel channel) wrote in his memoir, Kitchen Confidential - never to order fish on a sunday or monday - NYC restaurants get their fish on tuesday - according to him.
but he does make the exception for restaurants that are specifically seafood places - sushi, etc. They get fresh orders all the time.

I go by the Sunday/Monday rule also.
