Is there a Diet Meal Critique Thread?
You know, where you can write about certain foods that you've had, that you LOVE or HATE. Things that are so not worth the time or money? I figure it's such a huge industry, and there is so much on the market right now, that other opinions might help the discernable shopper/dieter? Does this make sense?

Okay, so I'm guessing there isn't - so I'm just going to post on a recipe that I thought was really good - and that my husband even enjoyed.
The Weight Watchers Layered Mexican Chicken dish. It's 6 points a serving, very easy to make and pretty tasty. I made it for the first time the other night and it went over like gang busters. It is kind of like lasagna, but you use tortillas in the layers. The recipe calls for your to poach the chicken - I'm going to try and make it more flavorfull next time, without sacrificing points. I also added some chili powder to give it some extra kick. It's also great because you can make it, have it for dinner and then save the rest for lunch or left overs. I was surprised that my husband took it to work with him the next day!

I always cook chicken with pam. I chop it raw into small pieces. Then I use pam and cook it almost through then I add Ortega Csmoky chipolte powder spice mix. It domes out great-this is what I use for tacos, quesadillas, enchilads. I'm sure you could do this for your recipe

A couple of other recipes that I really thought were worth a shot:
The Chicken Cordon Bleu recipe on weight watchers. Essentially what you're doing is replacing the egg with honey mustard and using a low fat swiss cheese. Then instead of frying them, you bake those suckers. They're very good. You can do chicken cutlets the same way. But with that you combine the honey mustard with fat free milk - like an egg mixture and then go to the bread crumbs. Delicious. Last night I made a roast tenderloin that was SUPER EASY. Rub some olive oil on it, smother it with herbs and spices and cook it on 400 for half an hour. I didn't even have to tent it. I got the cut from Waldbaums and it was really tender and juicy! It was 3 points per serving.
