Italian-American Christmas Eve
I know it's kinda early for this but since we are hosting Christmas Eve for the very first time, I wanted to start to gather ideas and recipes.
This what my menu looks like so far:
Appetizers Proscuitto Bread (3) Spinach Dip w/ White and Rye breads Sausage, Cheese & Cracker Platter
Main Menu Manicotti Tortellini with Alfredo Sauce Eggplant Rollatini
Fried Breaded Shrimp Fried Calamari Stuffed Calamari Chicken Cutlets (for the kids) Salad w/ tomatoes Potato Croquettes Stuffing w/ Gravy Cranberry Sauce
Desserts Rainbow Cookies Apple Pie with Vanilla Ice Cream Assorted Pastry Dish
Where I am concerned is the fish. I don't really prepare a lot of fish on my own but I want to try to make this more traditional. I found this great recipe that I want to try: Stuffed Calamari
Anyone have any other suggestions or care to share their menus?

Re: Italian-American Christmas Eve
Danielle and I had Christmas eve for the past two years.
Last year she made two versions of her stuffed breads
Pasta Fusulli....
Not sure about the Main meal though....
Something italian.
The first year she made Pork Roast
Most of her family doesnt eat fish, so I just had some shrimp for appetizers...

Re: Italian-American Christmas Eve
We do 7 fish, and it usually involves mussels (they're really not that hard to make), stuffed clams, insalata di polpo (you can buy this pre-made, and p.s. I won't eat that crap! ), shrimp, scallops (pretty easy to make too - just don't overcook), crab stuffed flounder (very easy), and sometimes my mom will make spaghetti with clam sauce.

Ohhh!!! Love these ideas. Do you have a recipe for the crab stuffed flounder?

No, not on me. I don't really even use the same one every time since all the recipes are pretty similar. This one is from AllRecipes.com, and it sounds really good! (got good reviews too)
ETA - I just saw that I said "stuffed clams" in my other post when I meant "baked clams".

Re: Italian-American Christmas Eve
I was just thinking that I have to start a list for my menu also... i get tired just thinking about this!
Im having it for the 1st time at my home and im so nervous bc although i grew up w/the traditional italian 7-fish and never ending buffet, i will be cooking for my in laws and the extended family- all straight from Sicily (accents&all! lol) and theyre amazing cooks...
i know they will bring food &help me out,but for the most part i will do most of the cooking. Off the top of my head im thinking:
antipasto(no meat)& parmaggiano reggiano stuffed peppers i carduni-fried rice balls stuffed artichokes stuffed mushrooms baked clams lard bread
insalada di mare Alaskan king crab sauce w/linguini lobster tails baccala-not sure how im making this yet fried eel(tradition-yuk!) shrimp fradiavalo Filet Sole piccata pasta w/anchovie sauce-(my DH's contribution!)
broccoli or rabe cauliflower w/breadcrumbs
(PS..i eat NONE of this!!!) Dessert: italian cheesecake pannatone struffuli cenci pastries my family will bring in from brooklyn Biscotti vin santo black coffee anisette sambuka fruit&nuts&fennuke(spelling??) lots of vino!!!!
wow! sorry this is so long, but..there,thanks for making me think about this!!!!

This is what we have every year also, except my mom makes Linguini with clam sauce as the pasta dish. No meat in our house on the Eve, just fish! It's my favorite holiday
Don't forget the chestnuts

Ummm were you at MY house last year? I do Christmas Eve every year and this is my exact menu! With one exception, I stuff and bake the lobsters...soooo yummy.
& its true, this is definetly the most expensive holiday to host but in my family, the most higly regarded, so I am very honored
BTW: At my local fish market, they take advance orders, give you a number and have your order ready early in the morning, beats waiting on line forever and risking getting the sloppy leftovers.
