Italian wedding soup?
Anyone have a good recipe for Italian wedding soup?
I want to make some for Loey with little meatballs and ditalini pasta. My mom gave him some from a restaurant yesterday and he loved it!

I got a recipe from someone when I was on an email recipe swap once... I haven't made it but figured I'd post it for you. Due to the ingredients I'm assuming it's from College Inn Broth.
ITALIAN WEDDING SOUP 12 to 18 mini meatballs, fully cooked (half as big as regular) 1 can College Inn beef broth 1 can College Inn chicken broth Enough water to cover meatballs 1/2 bunch escarole or spinach, rinsed well 8 oz. acini de pepe or orzo pasta, cooked FIRM and drained Salt and pepper to taste Parmesan cheese to taste
Place meatballs in 2 quart soup pan and cover with water. Simmer 10 minutes, add broths and escarole or spinach. Add well drained, firm pasta and simmer 8 minutes. Season to taste, ladle into bowls and garnish liberally with cheese. This is a classic Italian soup served at most weddings. Serves 6.

My family has made this every year for decades as the appetizer for Thanksgiving. We never called it italian wedding soup though, just "meatball" soup LOL. Im bad with precise measurements, but i will try my best, this recipe makes a huge pot that fed many so you may want to half your meat to 1 lb..
First start as if your making chicken soup - put in pot water, whole chicken, an onion, salt pepper and fresh parsley. boil until chicken is done.
While boiling make your meatballs and chop your carrots into pennysize and your celery
2 lbs Ground beef (chuck) 2 eggs about 5-6 cloves of garlic minced (more or less depending on your taste) lots of locatelli cheese microplaned (i eyeball it, i would guess btwn 1-2 cups) italian breadcrumbs (eyeballed again about 1 cup) salt pepper fresh parsley chopped
mixed your meatballs and roll them into tiny tiny meatballs (the smaller the better).
Back to the broth - take out the chicken (you can use it for another dish during the week) add your raw meatballs directly into the broth, along with the carrots and celery
simmer/boil until meatballs and veggies are done (about an hour)
thats it! you can add pasta to it if you want (orzo or ditalini), we usually dont bc its a Thanksgiving appetizer.

I use Giada's recipe. The recipe is home, but I'm sure you can get it from the food network website... it's incredibly easy and delicious. I sometimes cheat a little and buy the mini meatballs at Uncle Giuseppe's.
