Re: job fairs?
Very rarely does anyone get hired "on the spot" at a job fair. It provides you the opportunity to meet face to face with recruiters, and thus develop a personal connection, so you are more than just a resume among their stacks of resumes. Follow up interviews are usually conducted before an offer is presented.
If you do go to a job fair, here are some tips:
Bring many copies of your resume on resume paper;
Try to research companies before hand and have a game plan
Arrive early and visit the booths that you are most interested first, but don't just skip over the companies you aren't familiar with - they may have great opportunities
Dress to Impress - recruiters will often mark on the back of your resume what you were wearing, and their initial impressions
Prepare an elevator speech to introduce yourself, and tell the recruiter about the types of positions you are interested in
As in a traditional interview, have questions ready for the companies
Always ask for a business card, and FOLLOW UP after the job fair with a thank you letter
You will have less time than in a traditional interview because there may be a line forming behind you - be prepared for this, and recognize that the recruiter has many other people to speak with at the fair - again, this is why Follow up is key.
Let me know if you have any other questions.
