Just made two awesome snacks
Roasted chickpeas Oven at 400 I took all the skins off a can of chickpeas. I dry roasted them for about 50 minutes total. I shook the pan every 10 minutes. Once they really started drying out and getting crispy I drizzled a very little bit of olive oil and sprinkled a good amount of salt, pepper and some cayenne pepper.
They came out super crispy with just the right amount of kick. They're easy to just grab a handful of. I'll make double the amount next time, but I wanted to try it out first.
Roasted Cauliflower Oven at 400 I took a small head of cauliflower and cut it up into really small florets. Tossed them in a bowl with 2 tablespoons of coconut oil, generous amount of salt and a little garlic powder. Roasted for 35 minutes, shaking the pan every 10 minutes.
This was AMAZING!!! I could literally eat an entire head of cauliflower like this every day. In fact, I'm ready to make it again tomorrow since I already ate the whole batch.

In reading the reviews, it seemed as though some people had a hard time getting them to really dry out and someone suggested that peeling the outer layer helped crisp them up. I may try not peeling them next time to see if it really makes a difference. Because even though skinning them is easy, it's definitely time consuming.

I will try the chickpeas I roast cauliflower all the time, it is amazing.
try Burnt Broccoli, its just as good

My mother in law does this with chickpeas, but adds pistachios.
I do the cauliflower all the time; same for broccoli, brussel sprouts.

I'm so jealous that you guys have been roasting cauliflower and broccoli all this time! I can't believe it took me this long to prepare it this way. This may be a daily thing for me now. Lol

I buy 2 heads of cauliflower at a time! When i roast it my DDs often eat it all in one sitting!
