Just wanted to share a meal that Ava loved...
Last night I made these great chicken burgers that Ava devoured, and I thought I'd share with all the other moms looking for food ideas.
1 lb. lean ground chicken
1 package thawed chopped spinach
one lemon
6 tbsp. crumbled feta cheese
oregano
salt
pepper
First you squeeze the water out of the chopped spinach and add about a cup to the ground chicken. Add the feta cheese, 1 tbsp of lemon juice and salt, pepper and oregano. Mix well (I use plastic gloves and then smoosh with my hands), then divide the mixture into four and make patties out of them. Grill and you're done!
I left out the feta from Ava's since she cannot have it and substituted with some soy cheese. She ate it like it was going out of style. It was really flavorful and she got some spinach in, too!
