Lasagna for 12 people
So I want to prep and freeze lasagna for when my family is here next week. We will be 12 and I don't know how much to make? I have my regular lasagna pan which measures 9x13, plus another 9x13 pan and then a 7x11 pan and an 8" square pan. I'm not serving bread or anything with it, just the lasagna and a salad.

I would make 2 pans (9 by 13). Some people may want more than one piece, especially since it's the main part of the meal and you are just serving with a salad. Leftovers always stay well, you can always freeze them if you have a lot leftover.

my relatives make it in one of those large aluminum trays, but you mentioned you want to freeze it prior. I don't know if it will fit in your freezer.

That's what I was going to suggest. It's much easier making 1 large aluminum tray rather than 3 smaller trays. Also makes cooking, serving and cleaning easier.
