Lasagna help!

I have been making lasagna for YEARS but it always looks dry and deflated. Can someone help me with either a recipe or tips so that it looks amazing out of the oven AND tastes just as good? Thank you!

Use sour cream and mix it in with your ricotta! it won't dry out!Chat Icon

are you mixing eggs into your ricotta cheese? Are you layering sauce and cheese, alternating?

Okay, here goes.

mix egg, ricotta and shredded mozz with s/p and herbs.

cook noodles.

layer pan with sauce. now it should be known that i line the pan with foil and i was told today NOT to.

layer of noodles.

layer of cheese, then sauce on top.

noodles, cheese and sauce.

noodles, extra sauce and more mozz.

cover with foil,

cook on 350 for 40 minutes.

I agree with no foil..I use a foil pan though. Never had an issue.

I don't mix mozzarella into my ricotta. I only use it on top. I use 3 eggs minimum depending on how big the eggs are.

I also use chopped meat in between my layers.

it only needs heating not full blown cooking. I also cover it for 20 minutes and then uncover and melt the cheese on top.

Sounds like mine!

Each row, I also alternate the direction of the noodles, 1st horizontal, 2nd vertical, 3rd horizontal, 4th vertical...

Also, let it sit about 15 minutes before cutting so it sets.

strain ricotta cheese to get all the liquid out and then mix with 2 or 3 eggs...I don't put any spices in, because I've already put spices in my sauce....

cook lasagna noodles al dente...

put a layer of sauce on bottom of pan, then a layer of noodles.

put a layer of ricotta cheese mixture on, but don't dump it on, spoon it out onto the middle of each noodle, so you almost have a line of it...

the sprinkle some shredded mozzerella on top.

then sprinkle cut up pieces (like a 1/2 inch thick) of sausage onto the cheese (I always make sauce with hot and sweet sausages)

then spoon a layer of sauce onto the cheese (not a ton, just some)...

then repeat the layers....

save the nicer looking lasagna noodles for the topping...the topping should be lasagna noodles, sauce and mozzerella cheese.

bake at 350 for like an hour....you know it's done by sticking a butter knife into the center, and then feeling how hot the tip of the knife it when you take it out....


eta: yes, like the above poster, you need to let it "set" for like 15 minutes before serving.

Agreed.

Only difference with mine is that I mix sour cream in with the ricotta and eggs. The sour cream gives it a much creamier taste.

Lasagna is the one thing I do know how to cook!

Use only fresh pasta sheets.

Sauce on the bottom.
Layer one sheet.
Add sauce, FRESH ricotta, cooked ground beef, fresh mozarella, locatelli cheese.

Repeat 3 more times.
