What can you make with leeks? What do they taste like?

a very mild onion. i like them!
they need to be cleaned well. you might chop them, like you would scallions, but large pieces.
saute with butter.
they can be served as a side vegetable with anything, roast chicken...

I have a mac and cheese like recipe with leeks. It is yummy!
1/2 lb. pasta (penne works well) 3 1/2 Tablespoons butter (i add a touch more I love butter!) 4 leeks chopped 1/4 cup flour 3 cups milk 8 oz (1 cup) Cheddar cheese grated (I like white cheddar, if possible) 3 Tablespoons breadcrumbs Salt and Pepper
Heat oven to 375. Cook pasta. Drain. Melt butter add leeks and cook on medium heat for about 4 minutes or until slightly soft. Stir in flour and cook for one minute, then remove from heat. Gradually stir in milk and return to hear and bring to a boil, stirring. Simmer for 3 minutes. Remove from heat and stir in pasta, most of cheese and salt and pepper. Pour mixture into baking pan (9x13 works for me, if you want a higher product use a smaller pan). Sprinkle breadcrumbs and remaining cheese over the dish. Bake for 20-25 mins until golden.

I love leeks! Very mild tasting. I use them when I make stuffing.
you need to wash them really well because the dirt gets deep into them. A good time is to cut them up and throw them in a bowl of cold water for a few minutes. All the dirt will sift out into the bottom of the bowl.
