Left over Pork tenderloin?
Any ideas for what to do with a leftover pork tenderloin? I have a big piece that I would like to do something with, other than freeze. I thought of making quesadillas, but would love some other ideas too.

I like to cut it into small pieces and mix with rice & beans, and season with garlic, cumin, chives and chili powder.
