My mom rubs Guldens Mustard all over the outside, then throws spices on it. It creates a great skin. Bake as directed.

I am rubbing it with herbs, olive oil, and lemon juice the day before to marinade. Then roasting in the oven.

rosemary, basil locatelli cheese (because when it seeps out it makes great crust) salt and pepper, oliveoil and garlic, 1/2 lemon (the juice) Puree in processor, make a bunch of slits in lamb and shove in lamb, its ok if it seeps out--do this the day before, sqqeeze a lemon on top. let lamb come to room temp 1 hour b4 cooking... cook at 450 for 15 mins then reduce to 350 iuntil done... 1/2 through pour some dry wine on bottom of pan.
after lamb is cooked deglaze juices..and pour over sliced lamb
