Let's talk Christmas cookies!
Please tell me what kinds of cookies you're making for Christmas - and pictures/recipes would be fantastic!
So far my ideas are:
Sugar cookies with royal icing Peanut butter cookies with hershey kiss Rainbow cookies Chocolate chip cookies

gingerbread chocolate chip sugar cookies peanut butter cookies {w/ the hersey kiss of course!} sometimes a molasses cookies i'll do too
i'll have to get my recipes out

Thumbprint cookies Nut Crescents Biscotti Fig Cookies Sugar Cookies Florentines Spritz cookie press cookies and I am going to try Buckeyes this year (like a peanut butter chocolate candy/cookie)

I don't like to do the 'typical' Christmas cookies b/c then you have like 500 of the same damn cookie on the table - But I do LIKE to make the cut out shape sugar cookies. so I break my own rule and do those -
I also do:
Oatmeal Raisin Paula Deen's Gooey Chocolate Butter Cookies Cranberry/Chocloate biscotti
And something 'new' every year .........I haven't decided what yet.

I make Snowball Cookies.
1 cup butter or margarine, softened 1/2 cup powdered sugar 1 teaspoon vanilla 2 1/4 cups Gold Medal® all-purpose flour 3/4 cup finely chopped nuts 1/4 teaspoon salt Powdered sugar
1. Heat oven to 400ºF.
2. Mix butter, 1/2 cup powdered sugar and the vanilla in large bowl. Stir in flour, nuts and salt until dough holds together.
3. Shape dough into 1-inch balls. Place about 1 inch apart on ungreased cookie sheet.
4. Bake 10 to 12 minutes or until set but not brown. Remove from cookie sheet. Cool slightly on wire rack.
5. Roll cooled cookies in powdered sugar again.

I always make: Chocolate Chip Cookies (Ghirardelli) Snowballs Sugar Cookies Angel Thumbprints
Sometimes I throw in a wildcard cookie but that is only if I have time!
FM me if you would like any of the recipes and I will write them out. The chocolate chip ones I just follow on the back of the ghirardelli chips.

This is a BIG hit
1 can (8 oz.) almond paste 1 cup butter, softened (no substitutes) 1 cup sugar 4 eggs, separated 2 cups all-purpose flour 6 to 8 drops red food coloring 6 to 8 drops green food coloring 1/4 cup seedless red raspberry jam 1/4 cup apricot jam (I dont use this I use all raspberry) 1 cup semi-sweet chocolate chips
Directions: Grease the bottoms of three matching 13x9x2 baking pans (or reuse one pan). Line the pans with waxed paper; grease the paper.
Place almond paste in a large mixing bowl; break up with a fork. Cream with butter, sugarand egg yolks until light, fluffy and smooth. Stir in flour.
In another mixing bowl, beat egg whites until soft peaks form. Fold into dough, mixing until thoroughly blended. Divide dough into three portions (about 1-1/3 cups each). Color one portion with red food coloring and one with green; leave the remaining portion uncolored. Spread each portion into the prepared pans.
Bake at 350°F for 10-12 minutes or until edges are light golden brown. Invert onto wire racks: remove waxed paper. Place another wire rack on top and turn over. Cool completely.
Place green layer on a large piece of plastic wrap. Spread evenly with raspberry jam. Top with uncolored layer and spread with apricot jam. Top with pink layer. Bring plastic wrap over layers. Slide onto a cookie sheet and set a cutting board or heavy, flat pan on top to compress layers. Refrigerate overnight.
The next day, melt chocolate in a double boiler. Spread over top layer; allow to harden. With a sharp knife, trim edges. Cut into 1/2-inch strips across the width; then cut each strip into 4-5 pieces. Store in airtight containers.

Thank you Chrissy for posting the rainbow cookie recipe...I think I am "finally" going to make them this year...EVERY Christmas I say I'm going to and then never do...but, the recipe you posted sounds easy enough and that's it...I've got to do it...they are one of my FAVORITES!!!!!

Cut out sugar cookies Cookie press butter cookies Chocolate chip Reverse Choc chip (choc cookie with white choc chips) Pride of Iowa oatmeal cookies (SO good) Snowball kisses Ice Box cookies (a brown sugar cookie with walnuts--family thing) Nut cups (or pecan tassies, some people call them) Chocolate & white choc covered pretzels
Maybe ginger cookie of some kind, I'm still deciding

I make these every year---my husband loves them.
Reese's peanut butter cookies
COOKIES: 1 cup butter 3/4 cup brown sugar 1/2 cup granulated sugar 1/2 cup creamy peanut butter 1 egg 1 teaspoon vanilla 2 cups all-purpose flour 1 teaspoon baking soda 1/2 teaspoon salt 40-45 chocolate-covered miniature peanut butter cups
GLAZE: 1 teaspoon butter 1 cup semi-sweet chocolate chips 2 tablespoons creamy peanut butter
1. Preheat oven to 375 degrees.
2. For cookies: combine butter, brown sugar, granulated sugar and peanut butter in large bowl. Beat at medium speed of electric mixer until well blended. Beat in egg and vanilla. 3. Combine flour, baking soda and salt in small bowl. Mix into creamed mixture at low speed until just blended. 4. Form rounded teaspoonfuls of dough around each peanut butter cup. Enclose entirely. Place 2 inches apart on cookie sheet. 5. Bake 8 to 10 minutes or until cookies are just browned. Remove immediately to wire rack.
6. For glaze: combine butter, chocolate chips and peanut butter in microwave-safe cup. Microwave at 50% (medium). Stir after 1 minute. Repeat until smooth. (or melt on range top in small saucepan on very low heat.) Dip cookie tops in glaze.

Where in the supermarket do you usually get the almond paste? Is it in the baking area, or the nut area or someplace else?

I'm making
Gingerbread (so excited to decorate them with the kids even though I'm horrible at it)
7 layer cookies (I don't do the nuts though) - Recipe on the Eagle website. Best cookies ever! (I think they call them magic cookie bars on the site)
I found a Paula Dean recipe in a magazine that seems easy. Take sugar cookie dough, slice, put a thin mint cookie in between them and bake. I'm going to try those!
I also want to make peanut butter chocolate balls.
