Let's talk turkey
So I recently posted a thread that I've never made a turkey. I decided to buy a small one on a whim and make it for dinner tomorrow night for me, DH and DS as an experiment.
I bought a foil roasting pan.
Now just share your best and easiest recipes.
I didn't buy stuffing because I'm trying to limit my carb intake and we prefer mashed potatoes anyway.

How big is the turkey? I like to cut out the backbone and lay it flat. Its called spatchcocking (and yes, I say it a lot of times when I do it because I have the sense of humor of a 12 year old boy :D ). It puts all the skin up so it gets nice and crispy, which is my favorite part. You can youtube videos about how to do it.
I rub it down with softened butter mixed with salt, pepper, lemon zest and fresh herbs (sage for Thanksgiving).
If its really big, I would just do the same rub, but skip laying it flat.

Do a google search for Clinton Kelly's (The Chew) turkey recipe. It's a lemon sage butter rub that is to die for. I've used it a few times and my turkey ALWAYS comes out amazing!!
Also, you can cook it in the Reynold's turkey bags, makes it so much easier, cooks faster, and the turkey is always perfect.........moist and juicy.

Thanks ladies. These look awesome. I also texted my MIL who responded with her recipe too. I invited them over to try it and she did NOT respond so I don't know how to take that.

I just put some pats of butter on the top with salt and pepper. That is all. If it is a good turkey, it will be juicy enough that it will need nothing more.

Really interesting way of cooking! Thanks for suggestion. I'd tell my mom about it (the one who cooks the bird), but she's so used to doing everything one way

I watch too much Cooking Channel, but the advantage is supposed to be a greater surface area, thus less cooking time and juicier meat. And very crispy skin! I did a chicken like that tonight and it was delicious!

My turkey looks delicious guys! I'm about to take it out of the oven.
Both DH and I were having a panic attack earlier dealing with that raw dead thing, but I just took a deep breath and closed my eyes and now it looks like it's well worth it.
