Looking for a Chicken Sausage recipe for tonight

Hi danielle, I hope.
I bet you can replace for any type of sausage.
SAUSAGE QUESADILLAS
6 flour tortillas (large) 2 c. shredded sharp cheddar cheese 1 c. Monterey Jack cheese 1 1/4 lbs. bulk mild Italian sausage, cooked, crumbled, and drained jar of prepared picante sauce (we like medium) 1 16 oz. can refried beans
Preheat oven to 375 degrees.
Remove tortillas from refrigerator and allow to come to room temperature. In the meantime, lightly spray two baking sheets with nonstick cooking spray.
Divide the sausage among the 6 tortillas, spreading on half. Add a layer of cheddar and Monterey Jack cheeses, and top with picante sauce. On the other side of the tortilla, spread a layer of refried beans. Fold tortillas in half. Place on baking sheets, and bake about 6 minutes, or until edges of tortillas are crisping and cheese is melted. Cut tortillas in half (pie shaped) to serve.
It goes with spanish rice, hope that helps.

That recipe sounds good.....but I dont know if I can handle that lol....My stomach I mean hahaha
Anyone else have a good recipe thats easy to prepare?

Hi!!
I usually use turkey sausage, but chicken should be fine..
CHICKEN SAUSAGE AND PEPPERS...
1/2 onion 2 peppers (I used one red and one green) Wild mushrooms Tomato paste - you really just put this in for color..but, I would say use a little less than 1/2 a can)
Fill bottom of pan with olive oil (use however much you like)...cut chicken sausage into small pieces and cook til they turn brownish..don't cook them alll the way through though.. Put these in a seperate bowl once browned.
Than take chopped peppers...cook these until they start to soften a bit. Next, dump chopped onions in pan. Add tomato paste...cook for a few minutes til onions get soft. Next, dump mushrooms and at the same time dump sausage...
Taste it as you go..I usually throw in a little salt if it needs it...but, sausage usually gives it enough flavor.
Also, if it looks like it's drying out as you cook, add a little more olive oil or water (if you are trying to be healthy.

We usually just grill and depending on what it may be flavored with, melt cheese on top.
