For previous luaus I have made: -fruit salad -pineapple coleslaw -mango and chicken dish -corn on the cob -pork with rice -clams -shrimp cocktail -veggie platter
drinks: -lemonade -coconut water (use the coconut itself to drink out of!) -strawberry daiquiris -pina coladas -beer -etc.

I make pineapple chicken all the time for dinner. I make breaded cutlets and then throw them in a dish with pineapple chunks and duck sauce. I use a can of Dole pineapple chunks, or you can cut fresh if you have time.
For a party, I guess chunks of chicken would work better than cutlets.
Just an idea!

the "sand" dessert pail (you can also do it in indivual cups), it's a spinoff of the 'dirt' dessert
2 boxes of vanilla cookies 1 (8 oz.) pkg. cream cheese, softened 1 stick butter, softened 1 c. powdered sugar 3 sm. boxes (12 oz. total) Jello instant French vanilla pudding 3 1/2 c. milk 1 (12 oz.) Cool Whip 8 inch children's sand bucket with plastic bowl
Crumble cookies into a fine texture, set aside. In a medium bowl, combine cream cheese, butter, and powdered sugar. Beat until smooth, set aside. In a large bowl, mix pudding and milk until smooth, fold in Cool Whip, fold in cream cheese mixture. Mix thoroughly. Butter sides of the sand bucket. Alternate layers of cookie crumbs, then pudding mixture. End with at least 1 inch cookies on top. Insert shovel and chill for 2 hours.

Ok for the mango chicken:
I dice up fresh mangos and dice up the raw chicken. In a pan, I pan fry the raw chicken until well cooked with some garlic and some ginger and mango juice (not fresh- from a can or bottle). Sometimes I throw in some broccoli. Once the chicken is cooked, I toss it with the fresh mangos. It is really good with white rice or by itself. It's simple but the fresh mango and mango juice make it special.
for the pineapple coleslaw:
to be honest, my mil makes this, so i don't know the exact recipe for measurements but these are the ingredients and you can probably find a similar one on the dole website. -coleslaw mix (or if you do it individually, white cabbage with shredded carrots) -large can of dole pineapple pieces -mayonnaise -vinegar -sugar -black pepper whisk the mayo, vinegar, sugar, pepper and pineapple juice. toss into the cabbage. add the pineapple pieces. mix.
