Tropical Salsa 2 ounces cranberry-raspberry concentrate 4 ounces orange juice 2 ounces pink lemonade concentrate 1-ounce white vinegar 3 ounces seedless green grapes, cut in halves 2 nectarines, pitted and sliced 2 oranges, cut in sections 12 leaves fresh basil
In a saucepan heat the cranberry-raspberry concentrate, orange juice, pink lemonade concentrate and the white vinegar. Finish the sauce by poaching the fruit in the sauce for 2 or 3 minutes until fruit is soft but not overcooked. Add salt and pepper to taste and garnish with fresh basil.

Hawaiian Spare Ribs INGREDIENTS 1/4 cup vinegar 1/2 cup ketchup 1 tablespoon soy sauce 1 (8 ounce) can crushed pineapple, undrained 3 tablespoons brown sugar 2 tablespoons cornstarch 1/2 teaspoon salt 1/2 tablespoon fresh ginger, grated (optional) 3 pounds pork spareribs, cut into serving size pieces DIRECTIONS Preheat oven to 325 degrees F (165 degrees C). In a saucepan over medium heat, stir together the vinegar, ketchup, soy sauce, and pineapple. Stir in brown sugar, cornstarch, salt, and ginger. Cook, stirring constantly, until slightly thickened, about 5 minutes. Arrange a layer of spareribs in a roasting pan. Pour half of the sauce over the top. Arrange another layer of spareribs, and top with remaining sauce. Cover pan tightly with foil. Bake in a preheated oven until done, about 1 1/2 to 2 hours.

Hawaiian Chicken Wings INGREDIENTS 4 cups canola oil for deep frying 3 pounds chicken wings, tips removed and wings cut in half at joint 1 tablespoon garlic salt 1 cup cornstarch 2 eggs, beaten 1/2 cup cider vinegar 1/4 cup pineapple juice 1/4 cup ketchup 1 cup honey 1 tablespoon soy sauce 2 tablespoons toasted sesame seeds 2 green onions, thinly sliced DIRECTIONS Preheat oven to 350 degrees F (175 degrees C). Heat oil in deep-fryer to 375 degrees F (190 degrees C). Line a baking sheet with aluminum foil, and spray with nonstick cooking spray. Toss chicken wings with garlic salt, and set aside for 10 minutes. Place cornstarch in a large plastic bag; toss the wings, a few at a time until coated. Shake off excess cornstarch, then dip into beaten egg. Shake wings in cornstarch again, then fry until golden brown in deep fryer. Drain on a paper towel-lined plate. Stir together vinegar, pineapple juice, ketchup, honey, and soy sauce in a saucepan over medium-high heat. Once the sauce comes to a simmer, place the chicken wings in a bowl, pour all but 1/2 cup of the sauce overtop, and toss to coat. Reserve remaining sauce to for basting. Place chicken wings on prepared baking sheet. Bake in preheated oven for 30 minutes, then baste with remaining sauce, turn, and bake for an additional 20 minutes. To serve, place wings on serving platter, and sprinkle with sesame seeds and green onions.

Hawaiian Shrimp
INGREDIENTS 2 pounds medium shrimp, peeled and deveined 2 (20 ounce) cans pineapple chunks, juice reserved 1/2 pound bacon slices, cut into 2 inch pieces 2 large red bell peppers, chopped 1/2 pound fresh mushrooms, stems removed 2 cups cherry tomatoes 1 cup sweet and sour sauce skewers DIRECTIONS Preheat grill for high heat. Thread shrimp, pineapple, bacon, red bell peppers, mushroom caps, and cherry tomatoes on skewers, alternating ingredients. Place in a shallow baking dish. In a small bowl, mix sweet and sour sauce with reserved pineapple juice. Reserve a small amount for basting. Pour remaining sauce over skewers. Lightly oil grill grate. Cook kabobs on preheated grill for 6 to 8 minutes, or until opaque, basting often with reserved sauce.

Hawaiian Ham Bake
INGREDIENTS 3 cups cubed fully cooked ham 1 medium onion, thinly sliced 1 small green pepper, cut into rings 2/3 cup raisins 1 (8 ounce) can pineapple tidbits, drained 3/4 cup packed brown sugar 3 tablespoons cornstarch 3 teaspoons ground mustard 1/4 teaspoon salt 1 1/2 cups pineapple juice 1/2 cup cider vinegar 4 1/2 teaspoons soy sauce Hot cooked rice DIRECTIONS In a greased 2-qt. baking dish, layer ham, onion, green pepper, raisins and pineapple. In a saucepan, combine the brown sugar, cornstarch, mustard and salt. Stir in pineapple juice and vinegar until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in soy sauce. Pour over pineapple. Cover and bake at 350 degrees F for 30 minutes or until heated through. Serve over rice.

Hawaiian Meatballs
INGREDIENTS 2 pounds lean ground beef 1 (8 ounce) can water chestnuts, drained and finely chopped 2 tablespoons soy sauce 1 tablespoon brown sugar 1/2 teaspoon onion powder 1/2 teaspoon garlic powder 1 cup apricot preserves or jam 3 tablespoons apple cider vinegar DIRECTIONS Preheat oven to 400 degrees F (200 degrees C). Mix together ground beef, chestnuts, soy sauce, brown sugar, onion powder, and garlic powder thoroughly in a large bowl. Form the mixture into 2 tablespoon-sized balls, and place onto a baking sheet. Bake in preheated oven until no longer pink in the center, about 15 minutes. Stir together the apricot preserves and the cider vinegar, toss with meatballs in a clean bowl, then return to baking sheet, and bake for an additional 5 minutes.
