luncheon for about 10-15 people
It's for my DD 1st birthday (adults)..... need ideas on what to make
Faily simple, or things I can prep ahead would be great!

1. Sausage and peppers in a crock pot? You can get some italian bread, make a salad, etc.
2. Get a spiral ham and make homemade mac n cheese, baked beans, cole slaw
3. You can always just order a 4 foot hero, salads, etc.

Baked Ziti is always easy and you can make ahead of time. Big mixed salad meatballs chicken parm fresh Italian bread
All of this can be prepared ahead of time then put in the oven for reheating.

I feel like I am always doing Italian. But I don't usually do sausage and peppers, so that's an idea.
I was looking for some new ideas. Mac and cheese. I need a good recipe for that!!!!

How about a cold cut tray, make your own sandwich ... you can add things to it like plain grilled chicken, home cooked roast beef or meatballs (people can make chicken or roast beef sandwiches, meatball heros or just eat them seperate w/the bread & salads)
Mac & cheese would go w/that too
How bout a tray of roasted veggies (done in the broiler), which can be served room temp (roasted peppers, asparagus & portabello mushrooms for ex)

The roasted veggies are soo easy, they just have to be done seperatly usually b/c of different cooking times..
red roasted peppers - chuck the whole peppers in the broiler (dont cut or they get really dry!), top shelf and let those babies burn...keep turning until all sides look blackish....maybe 20-30 mins? Take out of oven, set aside in a bowl, cover w/ tin foil & wait until they are cool. Peel & save the juices they excreted..leave peeled peppers in juices. They are SOO much better than jarred peppers.
asparagus - cut bottoms off & place on cookie sheet, drizzle w/olive oil, salt, pepper & rosemary...you can make brussel sprouts the same way only cut them in half first. Careful broiling asparagus, if you leave it in too long they get mushy when cooled....I'd say 8 minutes might be good depending on the broiler. Brussel sprouts are delish when they get a little burnt...they take longer 20mins maybe?
portabellos - i like to scrape out the underside, the black crap (b/c its a little bitter), rub w/olive oil, salt, pepper and broil ... 10-15 mins...they get nice and brown and sizzly too. SOOO GOOD You can do this w/sliced eggplant & even zuchinni too to add color to your tray. Potatoes. I love my veggies! All can be served room temp.
Its so easy, just oil, salt & pepper and most veggies come out delish! HTH!

What about Pizza?
Either order some pies, or make a bunch of english muffin/ bagel pizzas
or like a bbq in the winter (hot dogs, hamburgers, chili )

LOL while we found a fairly good pizza place, most of the people are coming from NY and I don't want to hear about how NC just does not compare.
We still don't have a BBQ, so grilling is out.

That you so much. My DH loved the idea of doing this too! I think we are going to go with sandwiches. Coldcuts, meats, veggies, nice breads and cheeses.

This is my mac n cheese recipe
Mac and Cheese Ingredients: 1 box of pasta 1 bar of cheddar cheese (I like to use Cracker Barrel cheddar or sharp cheddar) CUBE IT INTO SMALL PIECES 1 cup flour 3 cups milk 1 stick of butter ½ red onion (chopped finely – use mini food processor) Salt Pepper
While the water for the pasta is boiling, over medium heat use a large pan and melt butter and add chopped red onion, salt and pepper. Once the red onion is soft (3-5 minutes), add the 3 cups milk and 1 cup floor and whisk continuously until it boils. Once brought to a boil add the cheese cubes to the pan and whisk continuously until it is all melted.
Add the cheese sauce to the drained pasta and place in a baking dish. Bake on 350 for ½ hour. If you like, you can add some breadcrumbs to the top to get those crispy pieces.
