Making fish
I want to make fish tomorrow night. I usually make salmon but would like to make sole. Any recipe ideas? Looking for something on the healthier side.

Making fish
I usually toast some bread crumbs, capers, garlic with olive oil then top the fish and bake it in the oven
I do this for any white fish

i will mix together EVOO, breadcrumbs, garlic, oregano, black pepper, and a pinch of crushed red pepper, put it over fish, add white wine to the bottom of the baking dish and a little evoo or butter and bake away. delish!

I love to use lots of lemon juice and zest with fresh herbs, slices of garlic, shallots, and tomatoes on top in a white wine broth--bake on 350.

Sole Meuniere is a huge favorite of mine.. simple and delicious.
For a thicker cut, I like to pan sear. Simply pat dry, squeeze on a little lemon, brush with olive oil on one side and then season. Get an oven safe pan SCREAMING hot - put the fish in oiled side down and let her rip for a minute. Toss on some baby tomatoes and pop it in the oven for a few minutes. Awesome.

I know how to season fish .......I just never know how long to bake it !! How long? What type of pan/dish do you use? Do you cover it, not cover it?
