Making food for about 55 people.

I have my sons 1st birthday coming up at a rec center. I want to try and make as much food as possble and only cater in what's neccesary. I'm going to get a hero also. What kind of foods would you make and how much of everything?

I was thinking...

chicken francaise with penne
baked ziti with meatballs
??????

I just had DS's 1st bday party (afternoon party as well), we had about 40 people and I made baked ziti (2 boxes pasta), salad, meatballs in sauce in the crockpot, appetizers (the usual veggies, cheese/crackers, chips, mozz sticks, etc), ordered 8 pizzas and had a ton of everything left over......

big salad
pasta salad
cheese and crackers
dips

I'd shop at Cosco or BJ's to get a lot of the stuff.

Things that are easy for large groups that you can prep ahead of time:

Baked Ziti
Eggplant Parm
Saussage & Peppers

The eggplant might be rough if you fry your eggplant (I don't bake either - I just don't think it's tastes 'right')
Same goes for the meatballs, I fry mine and then let them cook in the sauce ........- I hate them baked. So that can be a lot of extra work for 55 people ........ -

The hero and salads is easy ........

Start off w/ a big antipasto, dips, and some ordurves .......

I am having a 30th birthday party this weekend at our house for DH & we have 40 people coming. This is my menu

Appetizers:
Mozzarella sticks
Mini Egg Rolls
Pigs in a blanket
Chips & dip
Hummus & pita chips
Bruschetta & toast

Main meal:
2 trays Baked ziti (making myself)
2 trays Sausage & Peppers (making myself)
meatballs
Chicken Primavera (catered from La Piazza)
2 6ft chicken cutlet heros with fresh mozzarella & roasted red peppers
4lbs potatoe salad, 4lbs macaronni, 4lbs, cole slaw
Garden Salad
Fresh Mozzarella
Italian bread

I was going to say the same thing.

I'd make baked ziti with meat sauce in lieu of meatballs...since you are frying up the meat at once, it's MUCH easier.

I would scratch the eggplant as well. too much work.

I would actually scratch anything that requires double cooking actually.

since you are making sauce already, I'd do a HEAPING batch of it and make the following...

with the marinara

chicken parm (I don't fry my cutlets first...I season them with fresh chopped garlic, oregano, olive oil, salt and pepper, top with sauce and cheese...hit with parm and bake until cooked through)

sausage and peppers (brown sausages, remove from pan...add sliced onions and peppers, sautee until carmelized, return sausages, add marinara sauce and simmer until meat is cooked through)

adding meat to the sauce (I like a mix of ground pork and beef- chop up an onion, a few garlic cloves, olive oil, oregano, basil, s & p..add meat and cook over med-high until cooked and SLIGHLY browned)

mix in with ricotta mixture and ziti, top with more sauce and mozzarella.

make a HUGE batch of broccoli rabe to serve with food.

salad

bread

anitpasta and white bean dip as appetizer (Giada has a great recipe)

dessert.

Does sausage and peppers always use marinara sauce? I usually just eat the peppers so I don't remember.

not necessarily. but it's good to add a little when you're using sternos to keep everything wet.

my mom uses sauce.

I normally don't. it's totally up to you!
