making new recipes for thanksgiving

"they" say not to make recipes for the first time on thanksgiving, but what if it is your first time hosting? for instance, i've never made stuffing before (though i know the gist of it), so i will be making it for the first time on thanksgiving.

i can't just make a sample to eat because the bread i will be using is homemade pumpkin challah.

Please please share your pumpkin challah recipe.

And well, to respond to your post. Most people would make the pumpkin challah and the stuffing in advance to try it. Just to practice and to taste test it. That said, sometimes I do it only on the big day of. There are always hits and misses, so usually the new things are misses LOL. It's just the way it works. I will be making a few new recipes this year for thanksgiving. It's too expensive for me to try and make it beforehand. So whatever it is, it is.

We started hosting two years ago and just about everything was a new recipe. I made the turkey and it came out great, DH made really yummy stuffing, the brussel sprouts wound up steaming too much in the warmer and were a definite miss, my biscuits (which I had made before) somehow didn't come out as well as usual, etc... Last year was worse then the first year. DH insisted on doing the turkey. Well it took about 2 hours longer then he expected, which threw everything else off. I did all of the sides and planned them based on the time he told me the turkey would be ready. By the time we ate, all of my veggies that I cooked nice and crisp had gotten mushy and the stuffing was a little dried out. I wanted to kill him!
But you know what, no one complained either way. We hosted a beautiful holiday and both of our families were all together. And there was certainly enough edible food for everyone. Just do your best and everything will be great.

See, that I would try out ahead of time, b/c making bread can be tricky.

I will do things for the first time with company though. If I were to host, it would be my first time making a turkey. I've made chicken & duck before, just not a turkey, b/c it is just the 2 of us & I don't think I would make a practice turkey.

I'll be baking the bread ahead of time and freezing it (because I figure I may as well do it ahead because I can!) so I will know ahead of time if it doesn't work.

I wouldn't worry about it at all. Some things are going to go over better than others no matter what. I don't mind making new things for guests but I do try to pick recipes that have good reviews or feedback or from a cookbook that I really trust. I also think if you tell your guests the stuffing is made with homemade pumpkin challah they're going to be impressed no matter what! That sounds amazing!

Oh, in that case you should be fine. I would just taste a little of the bread before you freeze it so you know what you are working with.

In my experience with stuffing, if it goes "wrong" it is either too wet or too dry, so just add your liquid slowly & have extra if needed. And neither of those situations is a disaster anyway.

Sometimes it can be too salty but that is usually if you are using sausage.

When I was in college and we lived in a dorm with kitchens, my friends & I decided to have a pre-Thanksgiving & I made 2 kinds of stuffing & gravy. I hadn't made either before, but I had watched my dad & I asked him for a refresher & it all came out great.

thanks - it's a riff of what my MIL usually makes. she makes pumpkin challah stuffing, but it's more cubes of bread mixed with onions and dried fruit - much looser and less bread pudding-y, if that makes sense. So I am using a bit of her tradition but putting my own spin on it.

Yeah, I will definitely taste it before I freeze it. I will actually probably not use the bread maker, since I will need to make 2 loaves (the tori avery recipe is for 2 loaves), since we are having 14 people and I will need to trays of stuffing.
