Making Salads-???
I would like to make macaroni salad and pasta salad Friday night for my BBQ on Saturday. I wondered if there was a secret to not having the pasta stick together after putting it in the fridge for awhile.
Thanks :)

Re: Making Salads-???
I am assuming you are talking about pre-dressed pasta???
actually, it's recommened that you dress the pasta while it's still warm and then let it cool down and refrigerate b/c it absorbs the flavors of the dressing better (potato salad too.)
when I make macaroni salad, I usually drain the pasta in a colander and then quickly rinse it off with cool water and let it drain.
I usually make my grandma's recipe (very simple, sinful, and I love it) and she uses evaporated milk along with mayo, so I put some evap milk, salt, and pepper and stir that around to each roni gets coated.
then I get the rest of it together (eggs, mayo, onions etc) mix it all in the bowl and pop it in the fridge for a few hours. stir occasionally. perfect.

I always drain with cold water but seem to have a problem with the pasta clumping up. I do put the dressing on first before putting in the fridge too.

hmmm....do you salt the water and add olive oil to it? that could help.
also, how do you cook the pasta...more on the al dente side or a bit softer? it may be too soft for a cold salad.....

I always salt the water but not sure if I added olive oil the last time. Maybe I should try that. I try not to get it too soft too but maybe that might be a factor. Thanks :)

Re: Making Salads-???
I put 1/4 of the dressing on before I put it in the fridge just to let it absorb the flavor and then put the remaining 3/4 of dressing on right before I serve it. Once you stir it, all the pasta will separate.

Re: Making Salads-???
If it is an oil based dressing, you could always drizzle a little olive oil on the hot pasta and mix it together before putting it in the fridge...
