Maria's Black Bean Salad - Yummy Recipe!

I got this from The Nate Berkus Show - he has on Maria Menounous (sp?) - this is her recipe - made it this weekend- very very low fat - lots of protein - it was awesome!


Serves 4

Ingredients:

1 ripe mango, peeled, pitted and diced

1/2 cup Italian salad dressing - any flavor - low-fat or fat free

two 15 ounce cans of black beans, drained and rined

1/2 cup of chopped red onions

1 small green pepper, diced

1 small red pepper, diced

salt and pepper to taste

Directions:

In a food processor or blender, take 1/2 cup of mango with salad dressing until smooth.

In a large bowl, combine the remaining mano, beans, red onions and peppers. Add the mango puree.

Season with salt and pepper and chill.

**NOTES ON MY EXPERIENCE: Try it - I know, the mango sounds a little crazy, but it's awesome! I left out the green pepper and put extra red instead. Also, I added fresh parsley because I had it in the house. I let it sit for 2 hours in the fridge - it was great and I can't believe it but there were no leftovers!
