Mashed potatoes for three people?
How many potatoes would you buy if you were making for 3 people and didn't want a ton of leftovers.

Depends upon the size of the potato.
I usually buy medium sized Yukon Golds, using 4 to feed DH and me without leftovers. If they are smaller, I use 5.
If I use russets, then I use two potatoes since they are bigger.

I usually go by the rule of 1 potato per person and then 1 extra "for the pot"
