Meatless Friday recipes
since this will be an issue for some of us in the upcoming weeks, why not share some ideas:
I'll start
I saute spinach and onion in a little EVOO and then add egg whites. Roll it up in a tortilla, put it on english muffins, whole wheat bread or alone and it is so yummy!!
A friend of mine adds feta to it and says that is yummy as well!
