Meatloaf Recipes?
I put this on the recipe board but I know this board is busier. Thanks! I am planning to make meatloaf tonight and wondered if anyone had any good recipes? Thanks!

This one is similar to one my mom makes except she does not use ham, just bacon . . .

Recipe Summary Difficulty: Medium Prep Time: 20 minutes Inactive Prep Time: 15 minutes Cook Time: 45 minutes Yield: 10 servings User Rating:
2 pounds ground beef 2 eggs 1 cup bread crumbs (up to 1 1/2 cups) 1 cup grated Parmesan 1 tablespoon Italian seasoning 1 tablespoon black pepper 2 tablespoons fresh chopped parsley leaves 2 cloves garlic, minced or pressed 1 onion, diced 1/2 cup ketchup 1/4 cup Worcestershire sauce 1 cup milk 8 slices cheddar 8 slices baked ham 8 slices bacon
Preheat oven to 350 degrees F. In a large mixing bowl, combine ground beef, eggs, breadcrumbs, Parmesan cheese, herbs, garlic, onion, ketchup, Worcestershire. Mix well, gradually adding the milk (if it seems too moist, add bread crumbs until it is a consistency that will form a loaf without flattening. Spray a large baking or roasting pan with a non-stick spray and press the meatloaf out. Layer cheese slices and ham, covering the center line of the meatloaf, then close it together and tuck in the ends, forming a loaf which is oblong. Criss-cross the bacon strips to cover the loaf. Bake for 35 to 45 minutes or until the meat thermometer registers 160 degrees F.
Let rest 15 minutes, then cut and serve. Gravy is optional.

OMG...that sounds so yummy! Kind of like "Meatloaf Cordon Bleu" ; ) Let rest 15 minutes, then cut and serve. Gravy is optional.

I don't have specific measurements....
but ground beef an egg or two depending on how much meat breadcrumbs ketchup mustard chinese mustard if you have any in the house a little splash of milk salt and pepper small diced onion
it's really yummy...I serve it either on rye bread with melted cheese (swiss, gruyere if I think to stop and pick it up), or with mashed potatoes and brown gravy (just mccormick's brown gravy)...
ETA: edited b/c I forgot diced onion

I have a great one too that my friend and i made up. We use turkey but you can use any type of ground meat 2 lbs gr. turkey french onion soup mix packet can of crm of mushroom soup(I have used Low fat as well) Any type of cracker crumbs mashed up(or breadcrumbs but crackers come out better) Chopped onion-you can sautee or not Little bit of ketchup I form it into a loaf shape on a cookie sheet so it get crispier and cooks more quickly. I cook it about 400 for 45 mins or so-I use a thermometer so I'm not really sure how long but about that. It is awesome.

Meatloaf: 5 pounds chopped meat (2 1/2 pounds beef, 2 1/2 pounds pork) 15 ounces Italian bread crumbs 10 eggs 1 chicken bouillon cube, dissolved in 1/2 cup hot water 1/2 cup finely grated Parmesan Chopped parsley Salt and pepper
Tomato Gravy: 2 tablespoons butter 4 cloves smashed garlic cloves 2 tablespoons flour 2 (14-ounce) cans chicken stock 2 tablespoons tomato paste 1/4 cup red wine vinegar 1 (14-ounce) can whole tomatoes Salt and pepper 1 tablespoon dried oregano
To make Meatloaf: Preheat oven to 350 degrees. In a large bowl, mix chopped meat, bread crumbs, eggs, bouillon broth, Parmesan, and chopped parsley. Mix well with a wooden spoon until all the ingredients are well incorporated. Form into a loaf shape and place on a sheet pan coated with nonstick vegetable spray.
Place in oven and cook for 45 minutes, or until meatloaf has an internal temperature of 160 degrees.
To make Tomato Gravy: In a large saucepan, heat butter over medium-high heat. Allow butter to foam and begin to brown. Add smashed garlic and allow garlic to brown slightly. Sprinkle in flour and stir constantly, forming a roux to cook for approximately 10 to 12 minutes until golden brown. Add chicken stock and tomato paste and cook for 3 to 5 minutes.
Add 1/4 cup red wine vinegar and all tomatoes. Simmer for 30 minutes and finish with salt, pepper and oregano. Serve atop the meatloaf.

I was a little late coming on here. Mine was similar how I made it tonight but I will like to try yours too:
ground meat (mixture) 1 egg breadcrumbs (from container) salt pepper onion ketchup mustard
It was ok. None left!!
