Mexican lasagna!!!
i pkg ground meat (i use turkey) chili powder chopped onion garlic powder salsa low fat sour cream low fat schredded cheddar or jack 1 can re-fried bean 1 can black beans
first: sautee ground meat (i started using turkey. but you can use beef or chicken). I put a little garlic powder and chili powder and a little chopped onion...
then starting from the bottom and going up, layer as follows in a 9x13 baking dish":
Line with flour torillas (cut to fit!) spread 1/2 can refried beans on that spread low fat sour cream over spread salsa on that spread half of meat over bean top meat with low fat cheese sometime i throw black bean on too! another layer tortillas... REPEAT!
top with another layer of tortillas and some cheese on top put in the oven until everythin melts... 15 minutes or so!

Mexican salad
-Meat (you can use anything) - I use flattened chicken breast that I cook on a grill pan with just some lime juice (but it works with taco meat, sliced steak etc) - I cut it into thin strips but you can dice it. Chicken chili or beef chili work too.
-Lettuce
-black beans
- diced tomatoes
- sliced avocado or guacamole
-tortilla chips
-sour cream
-shredded cheddar or monteray jack mix
-jalapenos if you eat them
-Salsa
-black olives (you can leave it out if you don't like them)
- On a large plate you just put a bed of lettuce down, top with black beans and chicken. Then I put some shredded cheese, diced tomatoes, sliced avocado or guacamole. Then you can top it with a little sour cream and jalapenos and some diced black olives. I then put a few tortilla chips around the edge of the plate. I don't use dressing but you can if you want.
It is a very quick dinner esp if you have the meat already prepared.
