Mini Cheese Cakes (Easy to make and yummy)
Mini Cheesecakes PREP TIME 30 Min COOK TIME 15 Min READY IN 45 Min SERVINGS & SCALING Original recipe yield: 48 mini cheesecakes
INGREDIENTS 1 (12 ounce) package vanilla wafers 2 (8 ounce) packages cream cheese 3/4 cup white sugar 2 eggs 1 teaspoon vanilla extract 1 (21 ounce) can cherry pie filling
DIRECTIONS Preheat oven to 350 degrees F (175 degrees C). Line miniature muffin tins (tassie pans) with miniature paper liners. Crush the vanilla wafers, and place 1/2 teaspoon of the crushed vanilla wafers into each paper cup. In a mixing bowl, beat cream cheese, sugar, eggs and vanilla until light and fluffy. Fill each miniature muffin liner with this mixture, almost to the top. Bake for 15 minutes. Cool. Top with a teaspoonful of cherry pie filling.

What a blast from the past, my mom used to make these all the time. Very yummy! I also have a tip....if you dont feel like crushing the nilla wafer you can just put one at the bottom of the muffin cup!

That's how I make them. I also put diff toppings. A few with strawberry, a few with cherries and a few with blue berry topping. The strawberry are my fav.

honestly my mom never used muffin pans. She just lined up the foil muffin tin liners on a baking sheet and did it that way.
