Mini or bite-size desserts

Tell me your favorite mini or bite-sized desserts.

There's a big halloween GTG for mommies & their kiddies and I want to bake some little dessert treats.

I have no idea how many things I'm baking yet, but I'm just looking for ideas.

So far my ideas are:

mini sugar cookies pressed with 1 candy corn (martha stewart recipe)

brownie bites rolled in orange nonpareils

oreo or cookie dough truffles

Haley these are so good...everytime my best friend makes them they are gone in 5 minutes!

brownie candy cups

BTW-she uses a mini cupcake pan and mini foils so they are really *bite* size NOT cupcake size

Mini Cheesecakes:
These are delightfully dainty cheesecakes to make and give to friends. Muffin tins are lined with paper baking cups and a vanilla wafer is dropped into each. A lemon cheese cake filling is poured on top, and a fruit pie filling is spooned on top of that. A button of whipped cream finishes each of these delicious darlings.

Yield: 12 servings
Ingredients
12 vanilla wafers
2 (8 ounce) packages cream cheese, softened
2 eggs
2 tablespoons lemon juice
2/3 cup white sugar
1 (21 ounce) can cherry pie filling
Directions
Preheat oven to 350 degrees F (175 degrees C).
Line muffin tins with 12 paper baking cups. Place a vanilla wafer in each one.
In a medium mixing bowl beat cream cheese until fluffy. Add eggs, lemon juice, and sugar. Beat until smooth and thoroughly combined.
Fill each baking cup 2/3 full with cream cheese mixture.
Bake in preheated oven for 15 to 17 minutes. Cool on a rack. Top with fruit pie filling. Pipe whipped cream or sweetened cream cheese into a rosette on top of each cheesecake just prior to serving, if desired.

I have topped these with cherry pie filling, strawberry pie filling, pumpkin pie filling, and chocolate syrup

Re: Mini or bite-size desserts

Chocolate dipped marshmallows are yum. Put 2 orange Reeses for eyes and call them ghosts in disguise.

Peanut Butter Balls a little peanut butter piped on top and you've got eyeballs. Or some time with a fine tip piping bag and some broken pretzel twists and you can make spiders!

I loooove Rice Krispies Treats because you can do 3 things.. use food coloring to make them whatever funky color you want, mold them into different shapes and - if you are highly motivated - coat them in frosting.

And - last but def not least - Jello. Another fun one for the kiddles. I made Jello cubes and shapes for the kids all the time when they were little because I didn't worry about choking.

Whatever you do - I'm sure it will be delicious and fun! Chat Icon

awesome ideas! thanks everyoneChat Icon

I did a test run of the cookies with candy corn and wasn't all that thrilled with how they came out. They tasted like slice & bake sugar cookies and really were nothing special.

I'm going to try the brownie cups - those look awesome! And maybe the rice krispie treats or marshmallow! MMMM. I wanted to stay away from PB for now because I know a lot of mommies don't want the kiddies to have it yet.

I can't bring anything that needs to be refrigerated or served hot, but thank you so much everyone for the ideas!

Re: Mini or bite-size desserts

bumping for more ideas!

i've been trying things and totally failing!

I also tried Halloween Linzer Tarts which were SO cute, but too time consuming to make for the GTG! The cutters I have are pretty big, so rolling and chilling and cutting and baking and filling took FOREVER!

External Image

I tried the brownie bites, but for some reason they got REALLY hard. I think I overbaked them maybe..... and they didn't look too Halloweeny.

I might try cake pops, but they seem hard!

ETA:

No cupcakes - someone is already bringing those.

No oreo truffles - someone is already bringing those too.

I want it to be kid-friendly, so I'm trying to stay away from honey, peanut butter & nuts.

Re: Mini or bite-size desserts

The Kiddies love these and they are sooooo easy:

"Movie Munchers"

beat 2 sticks of butter, 3/4c dark brown sugar, 3/4c granulated sugar until fluffy: beat in 1tsp vanilla & 2 eggs. Wisk 2 1/2c flour, 3/4tsp baking soda, 1tsp salt, then stir into the butter mixture. Add 1c peanut m&m's, 1/2c chocolate covered rasins, 1/2c plain m&m's *(I used regular chips and plain m&m's-you can use anything you want)*. Press scoops of dough into mini muffin pans. Bake 20-25mins at 350.

you want them to be muffin bottoms (no tops) so dont fill the pan

Re: Mini or bite-size desserts

How about bite sized cream puffs, drizzled or topped with chocolate ?
