Moms of egg-allergic kids - sharing a recipe!!!
A friend actually passed this on to me and I'm passing it on to you!
You CAN make a regular cake/cupcakes using regular boxed mix! All you have to do is add in one can of diet soda (any kind) to the dry mix, mix it all together and bake as directed. It's so moist and yummy!
Boxed mix and a can of diet soda. That's it.

Just wanted to add- on a similar note- you can also replace the egg and oil with a can of pumpkin and a 1/2 cup of water
It only works on a devil's food cake though- the chocolate taste is strong enough to overpower the pumpkin taste and you don't taste it at all.
Just super moist.
It's actually a recipe from WW that my girlfriend shared with me. Bake them in cupcake tins for 30 min at 350 - 2 points per cupcake.

DD outgrew her egg allergy/reactions.
But this is a GREAT pancake recipe I made. It has bananas and apple sauce in it.
I actually prefer them to regular pancakes. They have a lighter, nicer taste.
