I was a director in daycare for many years...and yes, money is very nice, but many places don't allow them to take it. A nice lunch spread, starbucks gc's are also a very nice alternative...

I do gift cards. You could do and Amex card instead of just cash.
I do something personal and a gift card for something I know they like but I know at DD's preschool her teachers are all pretty comfortable so I try to get something that's a treat for them.
