Muffin Help - Banana Chocolate Chip Muffins

I just made Banana Chocolate Chip muffins but they completely stuck to the paper muffin liners. Why would this happen? The recipe called for foil liners but I only had paper. I have never used foil liners but are they better? I have made many types of muffins in the past with no problem but some reason, these completely stuck!
Here is the recipe (if that helps):
1 1/2 cups all purpose flour
1/2 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup mashed ripe bananas (about 2 large)
1 large egg
1/3 cup unsalted butter, (recipe called for melted but I used it room temp)
1/4 cup milk
1 teaspoon vanilla
3/4 cup semisweet chocolate chips

Preheat oven to 350°F. Line twelve 1/3-cup muffin cups with foil (I used paper) muffin liners. Mix flour, sugar, baking powder, baking soda and salt in large bowl. Mix mashed bananas, egg, melted butter, vanilla and milk in medium bowl. Stir banana mixture into dry ingredients just until blended (do not overmix). Stir in chocolate chips.

Divide batter among prepared muffin cups, filling each about 3/4 full. Bake muffins until tops are pale golden and tester inserted into center comes out with some melted chocolate attached but no crumbs, about 32 minutes. Transfer muffins to rack; cool.

Next time I would try it without any muffin papers and spray the muffin tin with PAM for baking spray

Not a bad idea, thanks. I have to go out later so I may just pick up foil liners too, in case I decide to try this recipe again!

Re: Muffin Help - Banana Chocolate Chip Muffins

I had a little batter left so I made a few in these little silicone scalloped cups that i have. They came out perfect and DS loved them! YAY!!! Although they aren't the healthiest (with all the butter and sugar), at least I know what I am giving him Chat Icon

The foil liners that I have gotten still have paper liners inside them.

Ditto, or try using a nonstick muffin pan. I can't stand the liners.

Btw, those muffins sound yummy! Chat Icon

Thanks. I never even thought about not using liners at all!
