Muffin recipes?
Anyone have any good muffin recipes?
We are having my family over for breakfast on Easter (then we are heading over to my in-laws for the day). It is going to be simple. I am making a spinach, mushroom, feta frittata, some turkey breakfast sausage, fruit salad, and some mini-muffins. I just don't have any good stand-by muffin recipes.

I've tried these 2 recipes, and the muffins come out nice!
Bookshop Muffins: Buttermilk Apple w/ Streusel This is a bookshop chef's bestseller.
Batter 1 1/3 cups light brown suger - packed firmly 2/3 cup vegetable oil 1 tablespoon citrus zest - finely minced 1 egg 1 cup buttermilk 2 teaspoons vanilla 2 1/2 cups to 2 3/4 cups unbleached all-purpose flour 1 teaspoon baking soda 2 teaspoons baking powder 1/2 teaspoon cinnamon tiny pinch salt 1 3/4 cups coarsely chopped fruit, lighly packed (apples, but can also be blueberries, bananas, frozen raspberries, frozen strawberries)
Streusel topping (optional): 1 tablespoon unsalted butter (very cold, cut into chunks) 1/3 cup brown or white sugar 1/2 tsp. cinnamon 1/2 cup finely chopped walnuts (Combine the dry ingredients. Cut the butter into the dry ingredients until you get a coarse, crumbly mixture.)
1. Prepare citrus zest and streusel and set aside. 2. Preheat oven to 400 F. Line muffin cups with paper liners. 3. In a large bowl, whisk together brown sugar, oil, citrus zest and egg. Do not over-beat. Mixture should be pasty. Add buttermilk and vanilla. 4. In a separate bowl, stir together flour, baking soda, baking powder, cinnamon, and salt. Blend gently the flour mixture with the brown-sugar mixture. Once partially blended, fold in fruit. (Frozen fruit will help firm up the batter.) If batter seems too loose, add a few tablespoons of flour (no more than 4) to make batter a bit stiffer. Scoop batter into lined muffin tin. Sprinkle topping evenly over each muffin. 5. Bake for 15 minutes. Reduce heat to 350 F and bake another 12 to 15 minutes. Muffins should spring back when pressed lighly.
Allow to cool in pan for 5 minutes before removing.

***** Jordan Marsh Blueberry Muffins Sweet and cake-like; use paper muffin cups; butter the top surface of the pan, so the muffins don't stick there.
8 tablespoons (1 stick) soft unsalted butter 1 1/4 cups sugar + more for sprinking the tops of the muffins 1/2 teaspoon salt 2 large eggs 1/2 cup buttermilk or milk 2 cups all-purpose flour 2 teaspoons baking powder 1 pint blueberries, rinsed, drained and dried 12-cavity muffin pan (butter the top) and paper liners
1. Set a rack at the middle level of the oven and preheat to 375 degrees. 2. Cream the butter with the sugar and salt by hand or with an electric mixer until light. Beat in the eggs, one at a time, until smooth. Mix the flour and baking powder together well and stir into the batter alternating with the buttermilk. 3. Crush 1/4 of the berries and stir into the batter; fold in the remaining berries whole. 4. Spoon the batter into muffin pans. Sprinkle tops of muffins with sugar. 5. Bake muffins about 30 minutes, until well-risen and deep golden. Cool the muffins in the pan.
Optional Crumble: Before baking the muffins, sprinkle the surface with the following crumb mixture:
8 tablespoons (1 stick) unsalted butter 1/2 cup sugar 1/2 teaspoon ground cinnamon 1 1/4 cups all-purpose flour
1. Melt butter; combine remaining ingredients and stir in butter. 2. Let set for a minute. Break into large crumbs by hand and sprinkle over muffin batter in pans.

EDIT: Found it -Here is her recipe - Just put the batter in muffin molds instead of a bread pan, but don't change anything.
makes about 10-12 muffins.
APPLE CINNAMON BREAD
1 stick butter 1 c. sugar 1 tsp. baking soda 1 tsp. vinegar 1 c. milk 2 beaten eggs 1/2 tsp. salt 2 c. flour 1 tsp. vanilla 2 c. peeled, chopped apples 1 tbsp. cinnamon
TOPPING:
1 tsp. cinnamon 2 tbsp. sugar 2 tbsp. flour 2 tbsp. butter
Heat oven to 325 degrees. Mix butter and sugar. Dissolve soda in milk and vinegar. Add eggs. Add together and then mix in rest of ingredients in order listed. Pour batter (it will be thick) into greased 8 x 5 inch bread pan. Prepare topping by mixing ingredients until crumbly. Cover batter with topping. Bake for 50-60 minutes.
