My WW Vodka Sauce

I thought I would share my modified penne ala vodka recipe. The points are just for the sauce though.
I really enjoy this. It's not as creamy and rich as the real thing but it sure hits the spot.

Recipes
Vodka Sauce


POINTS® value | 3
Servings | 15

sauces | serving size=1/2 cup


Ingredients

1 large onion(s)
2 Tbsp olive oil
56 oz Progresso Crushed Tomatoes
12 oz fat-free evaporated milk
8 oz heavy whipping cream
3 oz vodka

Instructions


Sautee onion in olive oil and add crushed tomatoes. Simmer for 30 minutes. Add heavy cream and FF evaporated milk. Continue to simmer. Add vokda, stir and simmer about 15-30 minutes to let vodka cook off a bit then serve over your favorite pasta.


***I editied the recipe a bit after making it tonight it needed a little tweaking. Also it only made 15 servings but the points didn't change***
**Also it's a bit chunky with crushed tomatoes so you could use tomato puree and cut down on the evaporated milk a bit so it's not too thin**

wow . . . sounds almost too good to be true! I read heavy cream in a recipe and automatically think "fattening"- I can't wait to try this!

Well like I said it's not quite as good as the real thing but it's a nice alternative.

I made some leftovers tonight with whole wheat fettucini and sliced 1/2 italian sausage on top. YUM!

i made it last night. i thought it was too mcuh onion-- i bought a really large onion, so i didnt use it all.

i also used one can of crushed and one can of puree

i also at the last minute decided to put some chopped ham in it- i put in one serving for flavor which is 3 points.. so it is basically free on the recipe as a whole.

i'll let you know how it comes tonight.

I guess I didn't realize I chose large onion in the recipe builder. It would probably be more small to medium size.
