Re: Need a Chicken Soup Recipe
Not sure about chicken that's already cooked, but you might try the following and instead of boiling the whole chicken, just do the bones, or just skip the first step completely and just use store bought chicken stock.
I put a whole chicken in a stock pot and cover with water.
Chop and add in one onion several ribs of celery a few carrots salt and pepper (you could use pre-packaged soup greens, which probably include a turnip and stuff - my mom uses that a lot).
Bring to a boil and then turn down and simmer for about an hour or until chicken is cooked.
Remove chicken and veggies from stock. Shred chicken and put back in. I usually reserve a bit of the cooked veggies and dark meat of the chicken and purree with a little bit of the stock, just to give it a bit of thickness.
Add fresh veggies (whichever you prefer, although I usually just do carrots and celery again), simmer for about 45 minutes more.
Add your (cooked) favorite pasta, rice, noodles, etc.
