Need a good veggie side dish
Well, this year Mother's Day will be at my house! 17 people
Anyway, i figured i will be doing a BBQ, rice, potatoes and i need a good veggie side dish...any recommendations?!

I like to grill them on the bbq. I take a red onion, red peppers, zuchinni & eggplant, cut the into chunks and grill them in my grill pan (you can also use skewers). Then when they are done, I toss them in olive oil and balsamic vinegar with salt and pepper. So yummy!

This sounds good!
I usually do something similar. I slice squash in half lengthwise, brush on olive oil and sprinkle with coarse salt and a little pepper. Then I grill it right on the grill - about 4-5 minutes on it's back and 2-3 minutes on it's face. Then I take them off and slice them.
I also love marinated portobello caps. clean them put them in a Ziploc bag and douse them with olive oil, chopped garlic, a little red wine vinegar, a splash of balsamic, some salt and pepper. Let them sit for at least an hour and then grill them until tender.
Another summer favorite is salad. I love tomato mint salad (tomatoes, mint leaves, red onion, vinegar, olive oil, salt and pepper). Corn Salad is great too - blanch corn and remove kernels - chop peppers, onion, throw in some basil and dress with apple cider vinegar, salt, pepper and olive oil. Or just do a giant spring greens salad with your favorite house dressing!

Spaghetti Squash
Cut it in half - Be Careful
Scrape out the insides
Rub both halves with olive oil - salt and pepper
Bake - face down for 1 hour at 350
When it is done, Scrape it out into a bowl and serve or serve with marinara and ricotta

You can also grill fruit. I also grill my veggies like stated above.
I grill Pineapple - Mango - Peaches - Plums etc....They can be a side dish or dessert

I got this from a Gordon Ramsay cookbook and I love it! It makes a lot too. Sorry for the metric measurements.
Creole spiced bean and vegetable salad
2 tablespoons olive oil 1 onion, thinly sliced 200g French beans, trimmed 2 zucchini (courgettes), trimmed and sliced into 1.5cm rounds 8 spring onions, trimmed and cut into short lengths 400g can haricot or butter beans, drained and rinsed 400g can of cannellini beans 400g chickpeas, drained and rinsed 250g cherry tomatoes, halved bunch of fresh flatleaf parsley, roughly chopped bunch of fresh coriander leaves, roughly chopped salt and pepper
For the Créole Spice Mix: 1 1/2 teaspoons sweet paprika 1 1/2 teaspoons dried basil 1 1/2 teaspoons dried thyme pinch of cayenne pepper, or to taste pinch of chili powder, or to taste
Heat oil in a pan and add the onion with some salt and pepper. Stir frequently over medium heat for 6-8 minutes until the onion is soft. Meanwhile, combine the ingredients for the Creole spice mix in a small bowl. Add to pan and stir for another minute or until fragrant. Tip the beans, zucchini and spring onions into the pan and cook for 6-8 minutes until tender. Turn off the heat, add butter and cannellini beans and chickpeas along with the cherry tomatoes, and toss to mix (I usually leave it on the heat to soften the tomatoes for a few minutes). Transfer the salad to a large bowl and stir in the chopped herbs. Serve warm or at room temperature.
