Re: Need a great marinara sauce recipe
not a marinara but more of a filetto di pomadoro-
the key is to make sure the tomatoes are VERY RIPE& FRESH-
if not, the sauce will have no taste.
drop tomatoes in pot of boiling water for a second to loosen skin. take out of pot and immediately put under cold water- skin shld fall off if you peel them a bit.
squeeze well by hand into a bowl, first cutting the top of tomato off (the hard part-lol i forgot what its called, duh!)
in a large saute pan pour EVOO on med -high heat (i put about 1/4 cup to about 10 tomatoes) slice a small onion thin and saute till translucent. add the tomatoes and bring heat down to med -add salt,fresh-cracked pepper, a lot of fresh basil, a tiny bit of sugar to taste. let the sauce bubble for about a min or two, and bring down to simmer & cover for about 20 minutes. This is a quick fresh sauce-great in the summer with fresh pasta, not marinara that needs to cook much longer.DELISH!
