Need help for a lunch get-together tomorrow!!
Two of my girlfriends are coming over for lunch tomorrow. One is brining pasta salad, the other a tossed salad. I have NO Idea what to make for a main course lunch. There will be children there so I need to make it easy and not too messy. Any ideas? Should I just do sandwiches? I think that might be too boring...maye a quiche??? HELP I am clueless!

I think a quiche sounds great. Maybe do that with some rolls or bagels and cold cuts.

I think quiche, with a pasta salad and a tossed salad is perfect. You could do a couple grilled chicken cutlets for protein too. I wouldn't do rolls/bagels. Also, maybe a nice apple pavlova or parfait or cookies for dessert?

I personally wouldn't do quiche for kids.
What about some panini?
Get some good crusty bread, top with fig jam, mozzarella cheese, fresh tomato slices and a slice or two of prosciutto.... grill on panini press or in grill pan (weigh down with a full kettle of water placed on top of a pot top).
or you could do grilled chicken, avocado, lime, monterey jack cheese...

I wouldn't either. I agree with the panini idea too. You could do plain grilled cheese for the little ones and some fancier jazz for the ladies that lunch! I might do a pot of veggie soup too just to give it a little more 'oomph'.

I found this recipe for lasagna cupcakes. That could be fun for the kids but still be like adult food.
Lasagna Cupcakes One cup of your favorite pasta sauce 1 lb hamburger meat 18 wonton wrappers 8 ounces mozzarella cheese , grated 3 ounces parmesan cheese , grated 4 ounces ricotta cheese Preheat oven to 375 degrees and spray 6 serving muffin tin with Pam Cook hamburger meat, season to taste, drain. Reserve 8 tablespoons of Parmesan and 8 tablespoons of mozzarella—this will be the topping. The remaining cheese will be used in the lasagnas (note you can vary the amount of cheese to taste keeping in mind that the parmesan is salty, the mozzarella is sweet as well as salty and helps to hold the lasagnas together, and the ricotta is sweet and creamy). Start assembling the lasagnas. Line each cupcake mold with a round wonton wrapper. Put a little Parmesan, a little mozzarella, and a little ricotta into each mold. Top with a little meat and a spoonful of sauce. Repeat layers of wonton wrappers, cheeses, meat and sauce, creating 3 layers in all, and ending with sauce. Sprinkle each lasagna with reserved Parmesan and mozzarella. Bake until the lasagnas are nicely browned, about 20 minutes. Let cool in the pan for about 5 minutes, then run a knife around the edges and remove from pan.

Chicken salad, you can make it fall like with grapes and almonds, or some type of chicken casserole.
