Need help--what veggies brown?
Can I cut zucchini and eggplant ahead of time for tomorrow? Can I prep the asparagus ahead of time? Can I pre-cut scallions?
Trying to get as much done in advance as possible.

I wouldn't precut any veggies.... however, if your doing eggplant fried or parm, you should slice them,salt them, and let them sit in paper towels to get all the liquid out of them........

You can cut zucchini and it doesn't brown - not sure about eggplant

I answered on NFR but will answer here too, I know eggplant will brown, I definitely wouldn't cut that too early.
