Need inspiration- leftover rotissirie chicken..
I would like to use up our rotissirie chicken leftovers;
Besides chicken salad, and chicken tacos ( too hot for soup) ...Any ideas?

I cut it up, make a pasta salad with feta cheese, bow tie pasta, tomatoes, olives and greek salad dressing...yummmm

chop it up with some ginger, scallions and soy sauce and put it in ready made potsticker wrappers and pan fry or steam them.
Sounds complicated but I am a potsticker junkie.

id cut up chunks, & make some arugula, pasta ( fusilli) carrots , sun dried tomaotes & some garlic & oil..

These are all great ideas ! I'm going to notebook this, some of the ingredients I don't have on hand for some , but they all sound so good !

chicken pot pie!
-Frozen pie crust (for bottom) -frozen veggies (I usually just do peas, carrots and corn. I boil ..then drain so they are cooked) add one can of chicken gravy..mix chicken and veggies -Pillsbury pie crust (the kind that comes in a sheet) place on top of the pie
bake till brown..

Can of cream of mushroom soup White wine (I swish it around the can of soup) about 3/4 of the can Shredded chicken
Cook soup and wine together, blending well. Add chicken. Simmer for about 25 minutes until wine cooks off. Serve over white rice.

I make an even easier pot pie...
I use left over chicken, one can of cream of chicken soup, frozen veggies and bisquick.
Put the chicken, cream of chicken soup and the frozen veggies in a pie plate. Mix 1 cup bisquick with water and hen put on top of the mixture and bake at 350 for like 20-25 mins. Easy and tasty!

I make chicken curry sandwiches. I mix mayo with curry, lime, ginger, and honey. I add the chicken, radicchio, and cashews. You can also add in raisins. It is delicious! The recipe is a Giada recipe. I serve it on ciabatta.
