Need lunch ideas for DH

DH finally got a new job and is seeing this as an opportunity to change his old lunching-at-work habits. He works in the city and needs to be able to slip it into his messenger bag. He eats like a freakin 5 yr old. Sandwiches (cold cuts) on wonder white bread, bag of chips. I just talked him into peanut butter sandwiches on some days, alternating with the cold cuts, which is a step in the right direction. He's not big on leftovers either.
He eats a yogurt and piece of fruit for breakfast, so I don't think he'd want that for lunch too. AS far as nuts are concerned, he likes only peanuts, so almonds and other nuts are out. Any suggestions?

He does also prepare and pack his lunch, so it's gotta be easy.

What about making a batch of cold pasta salad with chicken and some veggies he likes early in the week? Then he can take portions of it every other day or so?

That's not a bad idea--he would go for that. Too bad, I'd probably sneak too much of it and leave him with nothing by the end of the week! ;)

I make a pan of lasagna on a sunday and there is plenty of leftover for the both of us for the week. Or I'll make chicken cutlets (prepared any way you like), pack it in a tupperware, and reheat in microwave or make a sandwich with the cutlets.

I usually make a batch of something on Sunday and eat it for two days.

You could do salads, quinoa with shrimp, chicken salad sandwich, tuna salad, egg and avocado sandwich, soup, quesadillas, rice and beans, chili, (again prepare enough to last two or three days).

This is what I usually alternate for DH

Cold cut sandwiches
Chicken or tuna salad
Big tossed salad w/grilled chicken
PB&J
Chicken Cutlet sandwich
Sometimes a cold antipasta salad

usually a bag of chips, piece of fruit & a granola bar!!

I cook to have leftovers and stuff for lunch, to break up cold cut sandwiches.
Some of DH's favorites :
- Chicken cutlets - either as is or in a pasta salad or on a sandwich with roasted peppers and provolone.
- BBQ chicken legs and thighs
- Baked ziti or baked ravioli
- London Broil with noodles or on a sandwich.
- Roasted veggies with pasta and cubed mozzarella
- Potato and String bean salad
- Bagel with cream cheese and lox
- Mac n' cheese

He takes a couple pieces fruit and some sort of snack, like crackers or trail mix. Sometimes pickles or olives.

Great ideas, thanks - It would be super easy if he ate leftovers, bc we always have them. He's picky and OCD, not a good combo.

At least he prepares and packs his own lunch. DH gets lazy and likes me to do it, because I do it "better" Chat Icon

But, if something is cooked specifically to be eaten for lunch, is it still considered leftovers ?

i make a few chicken cutlets, and dress them up differently every other day.
bacon & blue cheese with spinach leaves & red onions
cheddar & bbq sauce
radicchio & avocado & lime
and change up the bread, wrap, or atop a salad
