Need Recipe - Tres Leches cake

My husband's favorite dessert is Tres Leche's cake. Does anyone have a REALLY good recipe for this? Because it is his favorite, he is picky about it being JUST right. Chat Icon TIA!

INGREDIENTS
5 eggs
1 teaspoon baking powder
2 cups white sugar
1/2 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/2 cup unsalted butter
2 cups milk
1 (14 ounce) can sweetened condensed milk
1 (12 fluid ounce) can evaporated milk
1 1/2 cups heavy whipping cream
1 teaspoon vanilla extract

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x13 inch baking pan.
Sift flour and baking powder together and set aside.
Cream butter or margarine and 1 cup of the sugar together until fluffy. Add eggs and 1/2 teaspoon of the vanilla extract, beat well.
Add the flour mixture to the butter or margarine mixture 2 tablespoons at a time, mix until well blended. Pour batter into prepared pan.
Bake at 350 degrees F (175 degrees C) for 30 minutes. Pierce cake several times with a fork.
Combine the whole milk, evaporated milk, and condensed milk together. Pour over the top of the cooled cake.
Whip whipping cream, 1 teaspoon vanilla, and 1 cup of the sugar together until thick. Spread over the top of cake. Be sure and keep cake refrigerated, enjoy!

* I found this recipe, I have never made it but it got rave reviews on allrecipes.com!

Alton Brown made it on Food Network. It looked sooooo good!


For the cake:
Vegetable oil
6 3/4 ounces cake flour, plus extra for pan
1 teaspoon baking powder
1/2 teaspoon kosher salt
4 ounces unsalted butter, room temperature
8 ounces sugar
5 whole eggs
1 1/2 teaspoons vanilla extract
For the glaze:
1 (12-ounce) can evaporated milk
1 (14-ounce) can sweetened condensed milk
1 cup half-and-half

For the topping:
2 cups heavy cream
8 ounces sugar
1 teaspoon vanilla extract


For the cake:
Preheat the oven to 350 degrees F. Lightly oil and flour a 13 by 9-inch metal pan and set aside.
Whisk together the cake flour, baking powder and salt in a medium mixing bowl and set aside.

Place the butter into the bowl of a stand mixer. Using the paddle attachment, beat on medium speed until fluffy, approximately 1 minute. Decrease the speed to low and with the mixer still running, gradually add the sugar over 1 minute. Stop to scrape down the sides of the bowl, if necessary. Add the eggs, 1 at a time, and mix to thoroughly combine. Add the vanilla extract and mix to combine. Add the flour mixture to the batter in 3 batches and mix just until combined. Transfer the batter to the prepared pan and spread evenly. This will appear to be a very small amount of batter. Bake on the middle rack of the oven for 20 to 25 minutes or until the cake is lightly golden and reaches an internal temperature of 200 degrees F.

Remove the cake pan to a cooling rack and allow to cool for 30 minutes. Poke the top of the cake all over with a skewer or fork. Allow the cake to cool completely and then prepare the glaze.

For the glaze:
Whisk together the evaporated milk, sweetened condensed milk and the half-and-half in a 1-quart measuring cup. Once combined, pour the glaze over the cake. Refrigerate the cake overnight.

Topping:
Place the heavy cream, sugar and vanilla into the bowl of a stand mixer. Using the whisk attachment, whisk together on low until stiff peaks are formed. Change to medium speed and whisk until thick. Spread the topping over the cake and allow to chill in the refrigerator until ready to serve.

I made the Alton Brown recipe today and it came out completely flat...I don't know why. It rose in the oven, but the cake was only about 1 inch high. It was cooked through and fluffy...I don't understand it.

What I did was cut it into thirds and put it into a loaf pan and put the glaze on it, it still tastes good (if not VERY sweet) but it isn't a sheet cake.

Hmmm.... I can't remember what it looked like on the show. I don't think he ever cut a piece; I think he just dug his spoon in and ate some.

Maybe your baking soda is old? Or maybe it really is supposed to be that flat. I guess I'll have to make it and find out!

ETA: I just read the reviews on FoodNetwork.com and someone said that if your cake came out flat, you may have calculated the flour wrong.

Two things being true here....my baking soda is old. Its about 2 years old probably, US baking powder is double strong compared to UK baking powder and I did use a scale to measure the flour. It was a good baking experience though...won't do that recipe again!

Someone left my cake out in the rain! I don't think that I can take it, cos it took so long to bake it! And I'll never have that recipe again! OH NO!!!
